"Pantry Raid" Chicken Enchilada Casserole

This made a delicious and hearty meal. The only changes that I made were to use 2 cans of chicken, browned with onions and a tsp. minced garlic. My family loved this one. I will definitely make it again.

Pumpkin Chip Loaf

This is a pretty good pumpkin bread. I followed the recipe exactly and it turned out very moist. I think next time I will add more pumpkin and a little more of each spice for more flavor.

Spiced Slow Cooker Applesauce

Orange Salmon with Creole Seasoning

This recipe was pretty good. I did make a few changes of my own. First, I used Blackened Seasoning instead of Creole, and added a little Garlic Herb Mrs. Dash. I chopped one clove of fresh garlic and added that, next time I will probably cut that in half. I used a Blood Orange for the juice. I also added about 3 Tablespoons of low sodium Soy Sauce to the orange juice. I baked in the oven at 350 for about 10 minutes before adding the orange juice and soy sauce mix. Then I baked for about 15 minutes more. Next time, I think I will just pour the orange juice on before the whole baking process, as the blood orange flavor was very light, almost not there. I like my flavors to really pop. Served with plain mashed potatoes and lemon herbed asparagus spears. This was a hit with my family!

Barbecued Meatballs

These were really good. I cut the recipe in half to serve 4. I used 1 lb. ground buffalo instead of beef, to cut down on fat and cholesterol. I used italian seasoned bread crumbs. And lite salt. Jack Daniels Hickory Brown Sugar Barbecue sauce was great with these. My family sure did love this recipe and I will make this one again and again.

The Best Steak Marinade

What a fabulous marinade! I omitted the oil since I had some pretty tough steak to tenderize and I wanted the full effect of the vinegar. I also added about a tablespoon of brown sugar...because let's face it...that stuff is delicious with just about anything. I was only able to marinate my steaks for about an hour and they were pretty moist. I will definitely use this again and marinate for longer. I used the leftover marinade and simmered it down into a sauce to pour over the steaks before serving. Delicious.

Seafood Salad III

I was looking for a quick recipe to use with some imitation crab meat and this was perfect. I followed the recipe and added a little black pepper and a tbsp of chopped green onions. We ate it on bread and with crackers. Great Recipe. I am keeping this one!

Tasty Collard Greens

This recipe is great. I have been using it as my base greens recipe for awhile now and with just a few changes here and there to taste (I like some onion and a pinch or two of curry), it always get's compliments. I cut down on the olive oil a little bit because it seems like the turkey leg adds a bit of grease too, and they were a bit too oily for me the first time.

Gooey Butter Cake III

This is one of my very favorite cakes! I got this recipe in the 80's from a family friend. This never goes to waste. On a recent episode of Paula Deen, she made it and added some chocolate toffee bits to the cream cheese mix before baking...looked yummy! I will give that a try next time.

Goat Cheese Salmon

Wow this is a delicious recipe! I absolutely loved the flavors of the herbed goat cheese and the salmon together. My husband added some parmesean cheese to the dijon/mayo mixture. He also broiled it for a couple of minutes at the end. I can't wait to try this one again.

Oven-Fried Catfish

This made a pretty good and crispy oven-baked fish. It was just a little bit too salty for me, and I usually use more salt than most. It did get nice and crispy in the oven. I would use this recipe again and just cut down on the salt just a little bit.

Quick and Easy Alfredo Sauce

This made a good tasting alfredo sauce. I added some oregano and nutmeg per a few of the reviewers. My sauce wasn't smooth, and it was a lot thicker than I wanted. I will try it again using a lower heat setting and adding ingredients in a different order to see if that helps.

This was pretty good. I wanted it to be just a little bit creamier. I think I will make it again and try adding some velveeta. The bread crumb topping was so good, I will use this on my mac and cheese from now on.

Crab Bites

Yum, these were good. I doubled the recipe, but not the cream cheese. I added salt and pepper, a tsp. of green onion, a tsp. of Old Bay Seasoning and a tsp. of Franks Red Hot sauce. I chose to bake mine at 350 for 15 minutes and broil for 5 at the end to brown the top just a bit.

Ground Beef Wellington

These were good. I would like to have a little more flavor and will have to tweak the recipe next time I make them. I also wanted double the sauce, as it ran out so quickly and we didn't have enough. Finally I made smaller loaves and still they weren't all the way done in the middle. The recipe is a great place to start though!

Chicken and Dumplings II

I only used the first 12 ingredients of this recipe for making my chicken in the slow cooker. This chicken had great flavor and I will definitely use it again! Then used the recipe for Herbed Dumplings from this site since I didn't have baking mix.
