Oven-Fried Catfish

This made a pretty good and crispy oven-baked fish. It was just a little bit too salty for me, and I usually use more salt than most. It did get nice and crispy in the oven. I would use this recipe again and just cut down on the salt just a little bit.

Maple Salmon

Onion Rings

These were really good. I have been looking for the right batter for my onion rings, and this was the closest I have found. I think some beer in the batter might just be the final ingredient that I am missing.

Bourbon Pecan Chicken

This is so delicious! You should definitely make this recipe. It was one of the best meals we had in awhile. I didn't try the clarified butter, but it seemed ok. I didn't have the green onions to my chagrin, but since it was my first time trying this, I didn't miss them. I will definitely make this again soon!

Quick and Easy Alfredo Sauce

This made a good tasting alfredo sauce. I added some oregano and nutmeg per a few of the reviewers. My sauce wasn't smooth, and it was a lot thicker than I wanted. I will try it again using a lower heat setting and adding ingredients in a different order to see if that helps.

"Pantry Raid" Chicken Enchilada Casserole

This made a delicious and hearty meal. The only changes that I made were to use 2 cans of chicken, browned with onions and a tsp. minced garlic. My family loved this one. I will definitely make it again.

Best Tuna Melt (New Jersey Diner Style)

Baked Kale Chips

These are really pretty good! I wouldn't say that they reminded me of potato chips, but I did enjoy the crunch of them. Even the kids couldn't get enough. I will be trying these with different spice combinations often.

Scallops Mascarpone

This recipe is delicious. I didn't have any mushrooms, so I added onions instead and they were wonderful with the asparagus. I also had to use cream cheese instead of mascarpone. I added about 1/2 cup of shredded parmesean cheese to that mixture too. It was so creamy and delicious, I will definitely try this one again.

Catfish Pecan

This was so good! I have always fried catfish, and was skeptical that it would get crispy enough in the oven, but it was perfect. I took some other reviewers' advice and added 1 tsp. blackened seasoning, 1/2 tsp. Red Pepper Flakes and two dashes of cayenne pepper. I also sprinkled both sides of the catfish nuggets with some lemon pepper seasoning salt before dipping it in the cornmeal mixture. I doubled the recipe, so I cooked mine for about 25 minutes before everything was crispy enough. I sprinkled the pecans on about 5 minutes before they were done, and wow were they good, definitely my favorite part.

Slow Cooker Chicken Taco Soup

I loved the flavor of this soup. I followed some suggestions and used Bill Echol's Taco Seaoning recipe from this site. I also took 4 white flour tortillas, basted both sides with lime juice and sprinkled sea salt on them. Then I sliced them into thin strips with a pizza cutter, and baked them in the oven until crispy, tossing occasionally. We used these to top the the soup along with shredded cheese and sour cream. Delicious!

Crabless Chicken Cakes

These were delicious! Fried them up for a dinner guest, and we all went back for more, then our guest even ate the crumbles left on the serving plate. I would double this recipe next time! We didn't have cracker crumbs so we used panko crumbs instead. This is a keeper.

Teriyaki Chicken

This was wonderful. I used brown sugar instead of white and added about half a cup of orange juice. It was delicious served with brown rice and the Sugared Asparagus from this site.

Cha Cha's White Chicken Chili

This chili tastes so good. We skipped the jalapenos since we didn't have them. The green chiles gave it enough spice. We only had a monterey cheddar mix for the cheese, and it was great. This recipe is a keeper.
