Beef Nacho Casserole

very good ,quick and easy.can substitute any cheese one hand,I had pepper jack and mozzarella,made it a little spicier,didn't had small can of corn so used southwestern corn with black beans.very good would make again and will make following recipe exactly

Chicken and Broccoli Alfredo

This was very good and easy.I used fresh grated Pecorino Romano cheese because that is what I had on hand,and sauted 3 cloves garlic with chicken.Although I think It would be fine without the garlic Just my preference.

Portobello Sandwiches

Yummy!These were great.I could only find three medium size mushrooms ,but it woked ,just shortened broiling time.I poured some of sause on the underside of the cap and let it sit for about 5 min. then broiled as directed. I didn,t make the caper mayo ,because I don,t care for then that much. But I had left over marinate and brushed on bun and toasted. then add small amount of mayo to bread with tomato and cheese.W0W could have eaten all of then by myself

Chicken Breasts with Balsamic Vinegar and Garlic

This was Great!I pounded the chicken between plastic wrap. So it would cook evenly. Didn't have fresh mushrooms so used a 4 oz. can. and used 1/2 tsp. thyme. It turned out moist and delicous.

Raspberry Kielbasa over Cheese Grits

This is a keeper.I used chery perserves and 1 4oz. can of mushroom,didn't have fresh ones on hand. I also used quick grits(not my favorite)and It worked fine but thickened fast.

Cucumber-Watermelon Salad

Great, Will make again.Was a little afraid of the amout of vinegar so used a scant 1/2 cup . It was fine. Next time will add full 1/2 cup.Also used regular cucumbers and seeded them.

Cheddar Bay Biscuits

Excellent,Made 1/2 recipe,Added 1/8 tsp.old bay along with other spices to dough,used milk in place of water and added 1/2 cup of cheddar cheese. Then made butter with same spices'This is a keeper

Homemade Black Bean Veggie Burgers

Tried these tonight they were great.Did as other suggested and drain garlic,onion and pepper.wash and drained beans and patted excess water off.mashed beans with potato masher and add other ingredients.used 1/2 tsp. cumin and 3 or 4 dashes of tabassco sause in place of chili sause.add 3/4cup bread crumbs last .and let set a few min. to absorb any extra moisture.sprayed non stick pan with pam a fried on low 5 to 7 mins on each side made 5 nice burgers.

Banana Crumb Muffins

Excellent, made a few changes. used 1/3 cup veg. oil in place of melted butter and add 1/2 tsp. apple pie spice to batter and doubled cinnamon in topping. made 14 medium muffins. Baked 15 mins in my oven. Will make again.
