Banana Crumb Muffins

YUM, YUM, YUM!!! I have banana trees, so have tried nearly every banana recipe known to man or woman. These are divine! Sure...adding this or that to them might enhance the flavor ...but from my perspective NOTHING needs to be changed. They are light, delicious & the crunchy topping is superb!

Colombian Lentils

DELISH!! I didn't change a thing. The cumin really makes this tasty. I had plenty of water & a nice 'gravy." Served it over brown rice for a healthy meatless meal. Thanks caro0888 for sharing.

Oyster Sauce Chicken

YUM!!!! Soo easy! Soo delicious. A keeper. TY for recipe. Not sure why others had prob w/ thin sauce? Mine was thick & delicious. I did add some ginger & garlic-chili sauce & reduced sugar to 1/2 C.

Egg Pesto Breakfast Wrap

DELISH! This has alot of flavor & uses only 2 eggs, 1 slice of bacon, & low fat ingredients so the "guilt" factor is gone. Its easy to make & a great change from the usual w/e b'fast fare. Thanks Spinn!

Peanut Butter Banana Protein Bars

My family really liked these. They're not sweet, but thats obviously not the intent of this healthy snack. If you prefer a sweet bar, I'd suggest adding some raisins or dried fruit; cheeries, or cranberries would be tasty! Mine were nice & soft w/ perfect texture. Perhaps the other rater who indicated hers were crumbly spread them too thin? Thanx "So NumberNine!"

Tortilla Beef Bake

"As good as the restaurant (we just ate at)," claimed the fam. We like spice, so I added a few chilis in adobo sauce to salsa. As a previous reviewer suggested, I eliminated the chips on the bottom (figured they'd just be soggy) & instead put a can of pinto beans on bottom. I added chili powder to sauce & corn to meat after browning. I topped with sliced jalepeno's & black olives. As recipe suggests, I put LOTS of chips on the top & they added a wonderful crunch & flavor. Great recipe Kim (even though I chg'd a bit, it's terrific & so easy). A KEEPER!

Coriander Salmon

A TASTY & easy way to prepare salmon. I doubled the spices cuz I tend toward alot of flavor & seared the fish over med-high heat. In addition, I deglazed w/about 1 C of white wine & then added the juice & hot sauce(after sauteing the garlic slightly. That made a nice "gravy." Thanx Nancy!!

Red Lentil Curry

YUM!!! I GOOFED & was doing 2 things while making dinner & I over-cooked the lentils (they don't take very long). Sooo, I added 2 (14 oz) cans of diced tomato's & upped the spices to adjust to increased liquid, rather than discarding what I had... (Sorry Emma, I don't chg recipes & then rate them based on my chg's, typically). However, the lentils would have been too mushy to mix into the curry base. I then served the "sauce" over the lentils. This naturally chg'd the character of the dish from that of a Daal, which was not my intent. But, I ended up w/ a VERY TASTY dish & less carbs cuz the rice was eliminated. A wonderful, healthy vegetarian dish even w/ my multi-tasking mistake! Thanks for sharing. I'm gonna try it the "right way" next time! This is a keeper!! :-)

Mediterranean Breakfast Quinoa

This is absolutely delish!!! A definite keeper. My fam is accustomed to grains, so I cut the honey in 1/2 & it was plenty sweet for our tastes. What a healthy, delightful way to eat the most important meal of the day. I would give this 10 stars if I could. The nutty, but sweet flavor is great! Thanx, Yasi! :-)

Creamy Banana Bread

I have banana trees, so I've tried alot of BB recipes. This is very moist & delicious. I didn't think it was dry @ all as some suggested. I made it exactly as recipe dictates. Next time I would add nutmeg to the batter & I'll double the pecan layer; personal preference. But, it's great as is! The texture is light. Thanx, Pam!

Ghirardelli® Chocolate Saltine Toffee

YUM! This tastes like my fav toffee candy bar. I followed the recipe exactly. It really does take the 20 min cook time for the toffee (for some reason I thought it would reach temp sooner;nope :}). I used a 2.5 qt saucepan b/c the (hot) toffee swells during cooking. Get those almonds on quickly so they don't fall off!

Slow-Cooked Carolina Beef Brisket

This is sooooo good! I LOVED it. The gravy becomes nice & brown & delicious. The only thing I changed was I added a couple of chipotle peppers (in adobo sauce) b/c I had them left over from a previous recipe. We like a little "spice." :-) Try it! You will not be disappointed! So easy too.

Caramelized Spicy Pumpkin Seeds

YUM! These are the best pumpkin seeds I've ever had (& I've been making the seeds for many years). They're sweet w/ just a little bite from the cayenne. A great combo of flavors. My new favorite! I didn't change a thing. Thanks Theresa :-)

Spicy Black Bean Soup

YUM!!!! This is delicious w/ just the right amt of "spice." I had previously cooked the black beans, so used 8 C water vs the 10 C called for. Also, since I was busy, I put all ingred. in the crockpot & let it simmer away on low. I typically blend 1/2 of my soup(s) w/ an infusion blender to thicken, but I would NOT recommend that w/ this recipe b/c you'll get a grainy texture (I tried it). Also, I might suggest one remember that black beans are firm & need alot of soak/simmer time. I soaked mine overnight & also simmered for several hours b/c I like them on softer side. THANX Angchick. This is a definite keeper!

Blueberry Gingerbread

Very tasty, light, fluffy cake. I didn't have buttermilk on hand, so I soured milk (~ 1 tsp lemon juice/1 C. milk) & it turned out perfect. Next time, since I love spicy gingerbread, I'll had more molasses & maybe 3/4 tsp ginger. But, that's personal taste. This is a great recipe my family loved. I'm enjoying it w/ coffee this AM too. Thanks JO!

Summer Squash Bread

This is a great way to use yellow squash, but it's a bit too sweet for my taste. However my husband, who has a huge sweet tooth, thought it was fine, as is. For my taste, I would cut down the sugar to 1 1/2 C. next time. It made 1 8" loaf & 2 mini-loaves. The cooking time was a bit longer (I lost track of how much-sorry). I used the full amt of nutmeg, & cinnamon; otherwise I suspect it'd be too bland? I did NOT peel the squash as 1 reviewer suggested.

Andrew's Herb Risotto

OH MY GOSH! Try this!!! It is divine! As lcpgh (author) suggested, you can customize this w/ whatever herbs you love. I used all suggested but added fresh thyme cuz I grow it/love it. Also as another reviewer suggested, I made it using the "traditonal" risotto method cuz I was afraid! It'd be easier using the author's suggestion which I will follow next time. YUMMY!!!!!!

Indonesian Pork Tenderloin

My family loved this recipe. I cooked it in the crockpot on low & the meat was infused with the delicious marinade flavors. This is a definite keeper. Very easy. Very flavorful.
