Generally I've been a "healthy" cook for 30 + years, starting in the 70's when many of us focused on health and the environment (& peace & love)! I enjoy cooking & baking & love eating! is a WONDERFUL tool for helping me enjoy one of my passions. It's great that people share their recipes, their tips & suggestions. I love this site & visit daily.
My favorite things to cook
"Ethnic" foods that focus on vegetables (or fruits) as the center w/ little (if any) meat. I particularly love Indian or Thai food.
My favorite family cooking traditions
LOTS of food @ Holiday celebrations but w/ my mixed European roots, unfortunately I have few real cooking traditions.

Berdean's Cube Steak
This was amazingly good!! A keeper. This recipe transformed a tough cubed steak...(I only eat forage fed/organic meats, which although delish, are tougher than the hormone laden beef), tender & delish. A great way to tenderize a normally tougher cut of meat. I added crimini mushrooms to the gravy while it simmered. The mock mashed potatoes (cauliflower, garlic, cream)& sauteed spinach were tasty for a healthy, lower carb meal. The flour on the steaks thickened the gravy nicely. This is a simple, but very tasty meal. It smelled so good while simmering :-) Thank-you for sharing.

Blueberry Banana Bread
This is a delicious, tender banana bread. I did not add baking powder & it rose nicely. The bread is light & not dense @ all. The 3 small loaves are apparently the mini-loaf size. I made one 8" loaf & one mini loaf. I added 1/2 tsp cinnamon & about 1/4 tsp nutmeg & some toasted walnuts b/c I love those in sweet bread. I'm not sure how long I baked the 8" loaf since I didn't time it. I think around 50 min. I will definitely make this again. The subtle tartness of the blueberries & the sweet bread are a wonderful contrast.

Kingfish Enchiladas
These are EXCELLENT!! I have never had Kingfish before, but there is a good supply where I live in FL. Although I'm a fish lover, I have to admit, the fillet smelled a bit fishy to me, so I soaked it in lemon juice as Charlie posted in 'Grilled Kingfish.' Please forgive me 1023, I usually don't alter recipes & then rate. Anyway, these enchiladas are fabulous & easy. I absolutely will make them again! Thanks for the tip about removing the dark meat for we Kingfish newbies & thanks for sharing!!
