Vegetable Pasta Salad II

Reviewed: Aug. 4, 2008
Such an easy recipe! Sometimes I either add more vegetables (broccoli, squash, asparagus, etc.) or less pasta to balance out the portions. Great as is.

Spinach and Feta Turkey Burgers

Reviewed: Nov. 15, 2008
Great recipe for ground turkey! I added garlic and chopped onions. Other than that, the recipe is good as is. This is definitely a keeper.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Dec. 7, 2008
The first time I made this, I used just wheat flour. That made the pancakes too dry. This time I did what the recipe called for. However, I used the suggestion of another reviewer and used 2 tbsp of brown sugar. I didn't have any blueberries around so I just added bananas on top after the pancakes were done. Pretty good! Of course, they aren't the buttery pancakes that I love, but I'm glad to have found a healthier version of my favorite breakfast item!

Blueberry Zucchini Bread

Reviewed: Dec. 12, 2008
Very good recipe! So simple and moist. It was more like blueberry bread than zucchini. Next time I will add more zucchini. Other than that, great as is!

Jamie's Minestrone

Reviewed: Dec. 12, 2008
This really is the best homemade minestrone I've ever had! I actually like it better than some restaurants' minestrone. It's so easy to make, and it makes a ton! I didn't change anything.

Chicken Tortilla Soup V

Reviewed: Dec. 12, 2008
This is the easiest chicken tortilla soup ever! I usually boil the chicken first and shred it before adding it to the soup pot. I used a medium salsa, and the spiciness was just right!

Cranberry Orange Bread

Reviewed: Dec. 14, 2008
This bread is so good! I'm living away from home at the moment, so I didn't have a zester for the orange peel and therefore omitted it from the recipe. I also used dried cranberries (that's all I had) and about 1/4 cup extra orange juice. The batter will look thick, but if you follow the directions, it will turn out yummy! This is a keeper.

Downeast Maine Pumpkin Bread

Great tasting and amazingly easy to make! It makes two good-sized loaves. I followed the recipe as is, except I had to bake it a little longer.

Classic Peanut Butter Cookies

Reviewed: Feb. 11, 2009
Pretty good recipe. I did add 1/4 c. more recipe, and 1/4 c. more flour according to other reviews, but I felt like it could have used even more peanut butter. Maybe it's because I used smooth PB instead of the crunchy. I prefer a little more softer, chewy cookie.

Italian Sausage Soup

Reviewed: Mar. 5, 2009
This soup is really easy to make, I think I already memorized the recipe! I thought it was going to need some herbs or spice, but I thought it was delicious as is. I used mild Italian sausage and low sodium beef broth. The sausage really gives the soup a great flavor.

What an easy recipe! I halved the recipe and used 2 cups of fresh blueberries instead of the suggested 1 1/2 cups. It turned out yummy!

Blueberry Nut Oat Bran Muffins

Reviewed: Aug. 18, 2009
I'm always looking for healthier versions of my favorite pastries. This one is a pretty good healthy alternative! Substitutions: used white whole wheat flour instead of AP flour (I found it at Trader Joe's), added 1 1/4 c. of applesauce, and 2 eggs instead of the egg substitute. I didn't add the granola on top, but I thought the muffin was good as is! Great recipe!

Quinoa Tabbouleh

Reviewed: Oct. 8, 2009
This is the first time I cooked with quinoa, so I wasn't sure how the texture should have been after cooking. It turned out a bit mushy rather than grainy. But no one noticed! I brought it to a potluck BBQ and they enjoyed it. I too, added some cumin and garlic because I thought it needed more flavor. This is a keeper for me!

Winter Fruit Salad with Lemon Poppyseed Dressing

Tasty and easy dressing! I halved the amount of sugar and used feta instead of Swiss cheese. I can't imagine how sweet it would have been with the full amount!

Easy Cranberry Granola

Reviewed: Nov. 29, 2009
I think 30 minutes is too long. I checked the granola after putting it in the oven for 30 minutes (and stirring every 10 minutes), and it was almost burnt! However, I did make one change: applesauce for the oil. Maybe that was the reason? I would still make this again, except I would take it out a little earlier. I also baked it on parchment paper = easier cleanup!

Becca's Custom Turkey Shepherd's Pie

Reviewed: Nov. 29, 2009
I used leftover turkey and mashed potatoes from Thanksgiving for this recipe. I omitted mushrooms and green beans since I didn't have any on hand, so I just added extra zucchini. I think it worked out great!

Turkey Pot Pie I

Reviewed: Dec. 8, 2009
Easy recipe, especially if you use store-bought crust (I got mine from Trader Joe's). Just a few changes: I used chicken broth instead of water and chicken bouillon, added peas and omitted the potatoes (thought it was too much starch), and added about a tsp. of thyme because I felt the mixture needed a bit more flavor. I also just poured the mixture into a pie pan and topped it with one crust. Turned out yummy! I'll probably use this recipe again with chicken.
