Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Surprisingly moist for a whole-wheat muffin. Not too sweet, so it's perfect for a breakfast muffin. I reduced the cinnamon to 2 tsp. and I thought that was enough cinnamon flavor.

Butter Chickpea Curry

Fantastic, easy recipe! I made a few changes, but I don't think it made a difference: omitted potatoes and added broccoli and red and yellow bell peppers to make a veggie curry. I didn't have tomato soup or diced tomatoes, so I used tomato sauce. Also, I used nonfat Greek yogurt instead of cream/milk. But the portions of the seasonings are perfect! Even with my healthy substitutions, the flavor is definitely there!

Roasted Vegetable Orzo

I love roasted vegetables, and this recipe is so easy to make and versatile. I used white mushrooms instead of portabello, chicken broth only to cook the orzo in (I didn't have any white wine) and subbed feta cheese for the parmesan. I also added fresh parsley and fresh lemon juice on top to give it more flavor since other reviews said it was lacking. Overall an easy recipe for a light lunch or dinner!

White Chocolate Chip Oatmeal Cookies

Yummy cookies with a few substitutions/changes: 1) decreased the white sugar to 1/2 cup, 2) increased the vanilla extract to 1 TBSP., 3) swapped out 1 cup of the white chocolate for dried cranberries (Craisins). I've baked with dried cranberries before and found them to be quite bland, so that's why I upped the amount of vanilla extract. And two cups of sugar just sounded like a lot. I would make it again.

Turkey Pot Pie I

Easy recipe, especially if you use store-bought crust (I got mine from Trader Joe's). Just a few changes: I used chicken broth instead of water and chicken bouillon, added peas and omitted the potatoes (thought it was too much starch), and added about a tsp. of thyme because I felt the mixture needed a bit more flavor. I also just poured the mixture into a pie pan and topped it with one crust. Turned out yummy! I'll probably use this recipe again with chicken.

Becca's Custom Turkey Shepherd's Pie

I used leftover turkey and mashed potatoes from Thanksgiving for this recipe. I omitted mushrooms and green beans since I didn't have any on hand, so I just added extra zucchini. I think it worked out great!

Easy Cranberry Granola

I think 30 minutes is too long. I checked the granola after putting it in the oven for 30 minutes (and stirring every 10 minutes), and it was almost burnt! However, I did make one change: applesauce for the oil. Maybe that was the reason? I would still make this again, except I would take it out a little earlier. I also baked it on parchment paper = easier cleanup!

Winter Fruit Salad with Lemon Poppyseed Dressing

Tasty and easy dressing! I halved the amount of sugar and used feta instead of Swiss cheese. I can't imagine how sweet it would have been with the full amount!

Quinoa Tabbouleh

This is the first time I cooked with quinoa, so I wasn't sure how the texture should have been after cooking. It turned out a bit mushy rather than grainy. But no one noticed! I brought it to a potluck BBQ and they enjoyed it. I too, added some cumin and garlic because I thought it needed more flavor. This is a keeper for me!

Blueberry Nut Oat Bran Muffins

I'm always looking for healthier versions of my favorite pastries. This one is a pretty good healthy alternative! Substitutions: used white whole wheat flour instead of AP flour (I found it at Trader Joe's), added 1 1/4 c. of applesauce, and 2 eggs instead of the egg substitute. I didn't add the granola on top, but I thought the muffin was good as is! Great recipe!

Italian Sausage Soup

This soup is really easy to make, I think I already memorized the recipe! I thought it was going to need some herbs or spice, but I thought it was delicious as is. I used mild Italian sausage and low sodium beef broth. The sausage really gives the soup a great flavor.

Classic Peanut Butter Cookies

Pretty good recipe. I did add 1/4 c. more recipe, and 1/4 c. more flour according to other reviews, but I felt like it could have used even more peanut butter. Maybe it's because I used smooth PB instead of the crunchy. I prefer a little more softer, chewy cookie.

Cranberry Orange Bread

This bread is so good! I'm living away from home at the moment, so I didn't have a zester for the orange peel and therefore omitted it from the recipe. I also used dried cranberries (that's all I had) and about 1/4 cup extra orange juice. The batter will look thick, but if you follow the directions, it will turn out yummy! This is a keeper.

Chicken Tortilla Soup V

This is the easiest chicken tortilla soup ever! I usually boil the chicken first and shred it before adding it to the soup pot. I used a medium salsa, and the spiciness was just right!
