Lemony Chicken with Artichoke Hearts

It has both the healthy and flavor factors going for this. With a whole wheat pasta and salad this a perfect meal for a healthy diet. I used light butter and white wine instead of vermouth since I didn't have it on hand!

Sicilian Meat Roll

YUM! I used prosciutto ham which made it a bit more salty, but yummy !!! I also used a tomato sauce flavored with onion and garlic instead of tomato juice.. I also put a little bit of the mixture on top, as well. And fresh oregano, instead of dried. Can't wait to make it again! Super easy!
