Cottage Cheese Chicken Enchiladas
i made this for friends, and it got rave reviews. i wasn't sure about the enchilada sauce (because i've never made it before), so i just used salsa, and some fresh chopped tomatoes, and everybody loved it. it's a keeper! two thumbs up!
