I ran across this recipe and had to try it! I made this for my husband and I, and we were really surprised by how well the flavors go together. It was a treat, definatly. Gourmet hot dogs, all the way!

Coconut Pancake Syrup

Ok, so I kind of screwed this up and it didn't thicken as much as I'd like, I tried using flour instead of cornstarch, my bad...but seriously, this is soooo delicious, even if a tad thin (my fault). I somehow had actual coconuts on hand, so if you are into some labor intensive coconut draining/ filtering/ scraping/ shredding/ dehydrating, I highly recommend it. We ate it on pancakes and on top of vanilla ice cream. I think using the fresh ingrediants really made the flavor. Will definatly make this again, with cornstarch next time.

Italian Herb Infused Olive Oil

So great! I used fresh basil and rosemary, but used thyme and oregano from a regular spice jar. I am liberal with my herbs and added more than the recipe asked for...drizzled it over a salad with tons of fresh veggies. The flavor combination of these herbs is as good as any salad dressing, and much healthier. Will defiantly make this on a regular basis.

Caribbean Zucchini Bread

Very delicious. I decided to make muffins instead of loaves. (Much easier to serve.) I was perhaps, a little conservative with the ingredients...it wouldn't have hurt to add more coconut and a little more brown sugar/cinnamon/nutmeg. (I'm famous for not exactly measuring ingredients, haha my fault) I didn't have any walnuts so I made it without. Husband and roommate both said they were delicious, especially with butter. It was a tad bit difficult to gauge the cooking time, but it was around 40 minutes for 12 muffins. The insides came clean off the toothpick, but upon the first taste, the muffin still seemed kind of mushy. I learned that the inside will firm up as it cools.

Creamy Potato Leek Soup II

Excellant recipe; I did add a couple of things. I used habanero pork sausage instead of bacon since I didn't have any on hand. I also added (according to other reviews) a teaspoon of garlic powder and coarse ground black pepper to taste. It was a bit thin, so I added a little bit of whole wheat flour until it was sufficiently thickened. Thumbs up from hubby and roommate.

Juicy Fruit Punch with Champagne

I made this for a Halloween party and everyone said it was delicious. I will say, however, it isn't the most attractive color, especially with the floating strawberries BUT that's not really important, it tasted really good.

Cheesy Catfish Chowder

My husband told me to give this recipe five stars! I followed the recipe exactly except for a couple of substitutions: instead of milk (I was out) I used a mixture of heavy cream and water (2 parts water, three parts heavy cream), instead of chicken broth (I was out of that too) I mixed some water and chicken flavored Top Ramen mix together and it turned out great. I used extra sharp, aged cheddar cheese which gave it a nice flavor. I also added a pinch of Tony's Cajun seasoning and topped the whole thing off with paprika. Really delicious, especially if you have some extra catfish and don't know what to do with it.

German Potato Pancakes

This recipe is delicious. Instead of using them as pancakes, I top them with pizza toppings. It makes for a heartier crust, my husband commented that it could be considered "man food". Lol, whatever that means...

Apple Crisp III

OMG, this was so delicious and easy. I squeezed some lemon juice onto the granny smith apples I was using.I used home-made salted butter in the recipe, it really does make a difference using fresh ingredients. I baked it for 50 minutes at 350 and it came out perfect. Try topping it with some home-made vanilla whipped cream. So good.

Oatmeal Cake III

Wonderful. My husband really liked these. All I had on hand at the time were steel cut oats and they are not instant. However, I still followed the directions in the recipe, save a couple more minutes of soaking in the hot water. They still came out delicious.

Great recipe. I only had wheat flour and cheap imitation vanilla and it still came out fine. Don't be shy with the vanilla, I'm adding more next time.
