Cuban Black Beans I
I found this recipe too vinegary and with too many chopped peppers. Also no need to bother with dried beans. I use Goya black beans- I saute the onions & one slice of green pepper in a bit of olive oil & then I add the garlic, bay leaf, cumin, S&P to taste, bit of vinegar and bit of brown sugar to balance out the flavor, and the sauteing brings out all the flavors and they blend better. THEN I add all that to the pot of beans and simmer. When you taste the cumin and garlic, that's Cuban,mmmm.

Margie's Cuban Sofrito (Sauce)
This is authentic Cuban sofrito, no tomatillos, no hot peppers, no cilantro but of course, comino (cumin)! It's similar to Puerto Rican sofrito which would add acaparra (capers) and green olives and omit the cumin. It's all delicious, love both cuisines.

Cuban Ropa Vieja
Delicious recipe but the cilantro can be omitted as it's not traditional to Cuban cuisine- tho' it has gained popularity by tv and online chefs/cooks due to the popularity of Mexican food in this country. It may be someone's personal favorite but it's not traditional and can definitely be omitted from this recipe.
