Shepherd's Pie VI
I thought this recipe was a great base for what I made. I followed the recommendation of a couple of other people, but put my own spin on it at the same time. I browned 1.5 lbs of lean beef, drained & seasoned with salt & pepper. I then added 2T ketchup and about 1/8c Worcestershire sauce and 2T of flour. I then gradually added 1 can of beef stock (instead of using gravy mix like others) and about 3 more Tablespoons of flour to keep the mixture thick. I added 1 (drained) can each of: sweet corn, green beans, carrots. Add salt and pepper to taste. Once the veggies were heated through, I put the mix in the bottom of 2 square baking dishes and split the mashed potatoes (I cooked about 7 medium) on top of the beef mixture. I sprinkled with cheese and small bits of butter. Baked at 375* for 20 minutes and they were perfect :).

Banana Crumb Muffins
This is the best banana recipe I've ever made/eaten! They are moist and delicious and my husband (who doesn't like bananas) loves these :). Everyone I've shared this recipe with has told me they love them too. I'll make these again and again! :)

Scrumptious Strawberry Shortcake
I wanted to make some strawberry shortcake for a church gathering and I came across this recipe. I had never had real shortcake before, so I decided to try it. These came out great! They were delicious... just the right amount of sweetness to compliment the strawberries and the texture was perfect. I doubled the recipe and we ate a bunch of them for breakfast without anything on them or with just a small dab of jam. I'll be making these again :).
