Crunchy Oven Fried Tilapia

Well, I made an interesting substitution for this one, didn't have corn meal, but had corn bread mix. I thought, hey it's mostly corn meal right? It actually turned out really well, just a little extra sweet which actually was not bad at all. I would do it again in a heartbeat. (plus now I had cornbread on the side). Amazing recipe. As someone who has really only enjoyed fish on the coast, this made even frozen Tilapia tasty. Thank you! Thank you! Thank You!!!!

Gobi Aloo (Indian Style Cauliflower with Potatoes)

I am only giving this 3 stars as it didn't really work for me. I am sure it is quite authentic, it just didn't suite my palette. I made as instructed (except followed one reviewers advice by adding a bit of water to help steam as I could tell it was going to be very dry.) It's very flavorful and good, but not really main course material. I guess that was my mistake. Still having a lot of fun trying all the various Indian dishes, thank you for the easy recipe.

Indian Dahl with Spinach

I made as is but made a dumb mistake of picking up coconut juice instead of coconut milk.. I still used it just to get some coconut flavor. It turned out REALLY good! I really liked this dish even though it is not anything like anything I had ever cooked before. Thanks for the wonderful recipe, will make again with actual coconut milk next time. BTW, this says 4 servings but we ended up with quite a lot leftover! luckily you say it freezes well, so that's what we did.

Thai Curry Tofu

This was my first attempt to cook with Tofu and I must say it was amazing! Thanks for the wonderful recipe! I only had a 13 oz can of coconut milk available so I added some frozen veggies and it was fantastic!

Quick and Easy Vegetable Curry

I listened to some of the reviews and made a few changes myself. I used coconut milk instead of water, used frozen cauliflower, broccoli and carrots, an onion, zucchini, and some red pepper. I used the same amount of Curry as the recipe suggested, and I thought it was great. Oh and I too skipped the 1st step and just simmered everything in a pot, but with these modifications it was absolutely delicious! Thank you for the easy recipe! **UPDATE** I made this again following the original recipe more closely, only change I made was I didn't have tomato paste so instead of curry powder I used red curry paste to accommodate... I found it just as tasty, maybe better because when I use the coconut milk that seems to dominate the flavor. Thanks again for the wonderful recipe! It has definitely entered the permanent rotation!

Mixed Vegetable Casserole

Made this for a pot luck, everybody LOVED it! Thank you for the tasty recipe! I too used 2 bags of frozen vegetables. I failed to thaw them so I had to cook the casserole a bit longer. And I used about 2/3 to 3/4 cup mayo instead because well a full cup scared me. Although now that I have tried it, I don't think a full cup would be that bad. Thanks again for the amazing recipe! Yum Yum!

Lasagna Spirals

Really good recipe. I didn't have nutmeg so I added some tarragon and some red pepper flakes. Really amazing recipe. Great taste and no meat. I think I really like the idea of spiraling the noodles rather than layering it seems easier to accomplish. It's just us 2 so I tried to bake half now in a 10x10 pan and freeze the other half, but kind of flubbed on halving the recipe. (FYI 6 spirals fit nicely into a 10x10 dish) So we have 2 normal spirals, and 2 kinda of.. meh spirals to cook up in a few nights. I think after a couple of tries we will get the hang of it. Random tip of the day: I read my chicken scratch wrong in the store and read 13 oz jar spaghetti sauce, when (after further review) had written 1 32 oz jar... long story short 14 oz jars are perfect to use when making a batch to bake half now, and freeze half for later without fear of the sauce going bad. :)

Slow Cooker Taco Soup

Always a hit at any potluck. Discovered by chance that this recipe can be vegan friendly by removing the meat, and finding a taco seasoning that doesn't have milk product. The vegans at work loved it!
