Garlic Roasted Chicken and Potatoes

I used chicken legs and put it in the crockpot. It was pretty good but I think it needs some tweeking.

Pumpernickel Spinach Dip II

This version is kind of bland. My family's version has fresh spinach sauteed with a small chopped onion. Cool it and add it to sour cream, soup mix and 3/4 cup of mayo (we use Miracle Whip). This one taste like the kind you can buy in the store when you need something quick.

Sweet and Sour Meatballs II

This recipe is very similar to a family recipe we have been making for years. Except we don't have cornstarch and the amount of each ingredient is slightly different. Just a note to others, if you are in a hurry to make, you can use frozen meatballs and a crockpot. We have made it in the oven and crockpot and have used any kind of meatball all with the same taste.

Lemon Butter Chicken

My husband and children (who are extremely fussy) loved this recipe. It is so simple to make too. I used chicken breasts instead of tenderloins and I doubled the sauce so we could have extra for dipping. The chicken taste even better the next day. This recipe has now turned into my husband's new birthday dinner.

Chewy Granola Bars

I made this for my boys as they love the chewy, chocolate covered store bough granola bars that are way to expensive. So they like the peanut butter kind so I made the recipe as it states (other than the fact that I ran out of honey and therefore had to use syrup in its place) and then spread peanut butter on top and added chocolate chips. I put it back in the oven until the chocolate melted and then froze it. I think next time I will listen to the others and use more honey, maybe butter would be better than maragarine too. But it is such a good base recipe to start from.

Hot Chicken Wing Dip

This recipe has made it's way around the city ha ha ha, after I found it. THe only difference we did was we use a hot wing sauce instead of the hot sauce. THen my cousin came up with an unique idea. She mad won ton cups (won tons put in muffin tins and baked for a few minutes) and put the dip inside the cups. It was just as good and it looked pretty.

Antojitos Minis

Since I am not a fan of beans, I chose to try the suggestion of using ground beef. So I cooked the ground beef just like I would to make tacos, adding store bought taco seasoning, I also fried up some chopped onions and green pepper with the meat. Then as said below, I mixed in some sour cream with the ground beef and reamining ingredients. I topped it all off after baking it, with lettuce and saour cream. I tried the won ton wrappers, but I prefered the tortillas cut in triangles. After spraying the pan, I had no problem getting them out. So basically I made mini tacos. Everyone asked for the recipe at the end of the night.

Chocolate Chip Cheese Ball

I left the cheese and butter out to get at room temperature like suggested and had no problems with it at all. I also rolled it in the skor bits. All at our christmas party loved it, both men and women alike. But I still think it is a "women's" dish.
