Meal in Foil

Reviewed: May 23, 2011
We just did this for our cub scout packing during a camping trip. They used similar ingredients minus the butter, but also had tater tots. This was really good too. It was really popular with the everyone including the kids who originally balked at the idea of meat and veggies in a pouch. Also, it was only needed on the campfire for 20 minutes and everything was wrapped in a cabbage leaf first.

Gravy Baked Pork Chops

Reviewed: Jan. 12, 2010
This is fabulous and easy. The chops came out super moist even though I cut every fit of fat off first. I followed the recipe exactly as specified. I served it with rice which was really good with the extra gravy.

Apple Oatmeal Crisp

Reviewed: Nov. 4, 2009
This was great! I took another reviewers advice and only used 1/4 cup of white sugar instead of 1/2 cup and it was still very sweet. This is a keeper for sure. Husband and I both loved it so much we emailed it to friends.

Ramen Cabbage Salad

Reviewed: Nov. 3, 2009
This is a great dish to bring to a cookout or summer event. It is hard to stop eating this once you start. Toasting the broken up Ramen noodles in a toaster oven before tossing them into the dish is key though. I also toast the almonds first too. Delicious!

Chicken Chipulos

Reviewed: Nov. 3, 2009
My picky 5 year old loved this. I liked the taste but found it to be a little too rich and too saucy. I think I would try it again but alter the recipe some.

Easy Chicken Marsala

Reviewed: Mar. 24, 2009
This dish is delicious! The only change I made was that I pounded the chicken breasts flat. Whatever you do, don't replace the scallions or leave them out. They really made the dish smell great! I served this with brown rice. There were no leftovers! A rare event since I have a picky husband and picky son. I'm already looking forward to making this again this week. I loved it!

Lentil and Sausage Soup

Reviewed: Feb. 8, 2009
This is a great recipe! I left out the optional pasta and the onion - that was the only deviation. This was soooooo good. I served it with grated cheese and fresh bread. Mmmmmm. Thanks!

Dijon-Tarragon Cream Chicken

Reviewed: Oct. 31, 2008
This recipe is great and easy too. I often will pound the chicken into cutlets for this recipe and sometimes use dried tarragon when fresh is not handy - but either way it's great and my husband and son like it a lot - and they are very picky.

Marinated Spicy Pork Chops

Reviewed: Aug. 12, 2008
I loved this! Easy to prepare and delicious! I used lime juice instead of lemon and cayenne pepper in place of chili sauce because it was what I had on hand - and it turned out amazing. I used thin center cut pork chops w/o bone, marinated them over night, and grilled them for dinner. I think I will make Tuesdays, marinated pork chop night from now on! It was so easy and so good.
