Old-Fashioned Pancakes

I have made these twice. I used the recommended amount of b. powder, but used a scant t. salt ~ 1 t. seemed a little much, and as I would with most pancake recipes, I added some extra sugar (think super-heaping tablespoon). And of course, just like any other pancake recipe or box mix: Add more milk to get your desired consistency. I think they are great! I love how thick they get.

Tuscan Cream Cheese Spread

This is awesome! I puree the artichokes (after removing any tough leaves) in my mini-processor. It is great with beer bread!

Dirt Cake II

Good as always. Kids LOVE it. I always leave out the butter and never notice anything lacking. I have left out the confectioners sugar by accident, and don't think that mattered, either. The pudding, cream cheese, cool whip are the essence of the filling.

Best Buttercream Frosting

Been making this for years! Doesn't need to form a ball, just cook to a boil (stirring constantly) and it will be a thick paste, like pudding. Cool partially, stirring every couple of minutes, then press a sheet of plastic wrap on the surface(to prevent a skin from forming) and refrigerate. I make the paste while my cake is baking, so it has ample time to cool. Beat the sugar & butter very well, add the paste and beat. White, granulated sugar is correct: I have made this many times since I was a kid. Always delicious, something different, not too sweet, great for a kids birthday when they are already overdosed on sugary treats. I make it whenever I find myself out of confectioners' sugar, also. I love it partially because it is nostalgic for me....

Crunchy Romaine Strawberry Salad

I really loved this, and will make it again. Don't forget to season the dressing with S & P! I think it would be equally good with dried cranberries or dried blueberries or a combo. This would also make it more adaptable to other seasons when strawberries are not as good.
