Our Favorite Mexican Style Lasagna

Reviewed: Jul. 7, 2011
This was pretty good- seriously man or kid food, but yummy. I added black olives on the top and queso in the layers. Also, I used black beans instead of pinto based on personal preference. My hubby ate two servings. It looked nice, the layers kept and it set well enough that I was able to cut distinct pieces without making a mess. This will probably be a rare dinner though because it is very fatty and salty. Thanks for the recipe.

Pear Crumb Pie

Reviewed: Sep. 10, 2008
This pie was awesome. I made this recipe because I like making things that are a bit out of the ordinary, and I had never even heard of a pear pie. I only did two things differently: I used pumpkin pie spice and extra cinnamon because I had no ginger, and I needed to add a bit more shortening to the crust because it was too dry to roll. I loved it, so did everyone who tried it. What a perfect way to start autumn! EDIT: I have made this pie several times now. I like it with apples just as much as I do with the pears. The only thing I change is 1.5t of cinnamon and omit the other spices. Also, I like Alton Brown's crust recipe (1cup flour, 6tbls butter, 2tbls shortening, .5t salt, in food processor, kept very cold) You must use butter in the crumb topping because margarine makes it soggy. I love this recipe..and so does everyone I serve it to. Thanks so much for sharing.

Chantal's New York Cheesecake

Reviewed: Aug. 30, 2008
I bake all the time, and I have lots of experience making cheesecakes. That said, this recipe is just ok. First of all, the crust needs a lot of work, it is bland and there is way too much of it. Secondly, the cake itself is creamy, but the texture is a bit firm (maybe too much flour). I still liked it, as did my boyfriend, but it is not the perfect recipe that so many other reviewers have said it is.

To Die For Blueberry Muffins

Reviewed: Aug. 17, 2008
I love this recipe. I have made it so many times, and I have never had an issue. I have substituted the blueberries for blackberries, raspberries, chocolate chips, whatever I have. Every Christmas, I make baskets of these muffins and give them away as gifts. These muffins look so perfect people can't believe they're not from a bakery. Thank you so much for this recipe. (Note: to people who are complaining of sogginess: use real butter, not margarine for the topping for some reason it does matter. Another tip, freeze your berries before you mix them in, mix them in last and gently and they will not cause your muffins to become purple)

Guinness® and Chocolate Cheesecake

Reviewed: Aug. 17, 2008
This is delicious! I threw my mom a birthday party and was looking for something a little different to make for dessert, and this seemed perfect. Every person at the party loved it. It is very rich, and very chocolatey, but to a true chocolate-lover, it is not too heavy. I followed the recipe exactly, and I will make it again, and again, and again.
