I've made this dozens of times since finding the recipe. It's great as is, and I've added everything but the kitchen sink to it: coconut, dried fruits, nutmeg, cinnamon, mace, almonds, chocolate, lemon zest, a splash of rum. And I always split the sugar between dark and white, and sometimes substituted honey for the sugar and applesauce for the fat. No matter what you add, it's going to be great. I like to soak my raisins in any of the following: red wine, sangria, cherry juice, orange juice, rum, or whatever I have handy. Also, as in all recipes,the cooking time is a guideline: watch for doneness regardless of the clock.
