J.P.'s Big Daddy Biscuits

This is a good basic biscuit recipe. My suggestions: if you use butter, scrape it in using the large size of your food grater. Frozen butter works best. To make outstanding biscuits, use lard for the fat, preferably leaf lard. (My household would scream bloody murder if I used it. Wimps.). Also, roll your dough out to half the depth, put butter (grated or pats) on one side, fold it over, then cut. Cut the left-over dough into strips, roll in cinnamon and sugar, and bake. These are called the dog bones and are fed to the younguns to keep them quiet until dinner. And why under cooking level on this site isn't there the choice of "tired"?

Extreme Banana Nut Bread 'EBNB'

I've made this dozens of times since finding the recipe. It's great as is, and I've added everything but the kitchen sink to it: coconut, dried fruits, nutmeg, cinnamon, mace, almonds, chocolate, lemon zest, a splash of rum. And I always split the sugar between dark and white, and sometimes substituted honey for the sugar and applesauce for the fat. No matter what you add, it's going to be great. I like to soak my raisins in any of the following: red wine, sangria, cherry juice, orange juice, rum, or whatever I have handy. Also, as in all recipes,the cooking time is a guideline: watch for doneness regardless of the clock.

Roasted Mushroom Soup

This recipe was great and worked wonderfully. For once I followed the recipe exactly, with one exception--I followed another reviewer's suggestion and roasted the onions along with the mushrooms. I'm going to triple the recipe this weekend, but this time I'm going to add chopped bacon and maybe some spinach. Either way, it was a lovely, lovely soup.
