Spicy Black Bean and Corn Burgers

These veggie burgers turned out great. I followed the footnote and used only 2 teaspoons of chili powder. They weren't too spicy. I might kick it up to 3 teaspoons next time. The use of the flour helped give the burgers browned look and helped keep them together. I'll be making these again. Thanks for the recipe!

Tortellini Picnic Salad

I really enjoyed this salad. I used almonds instead of walnuts. I like the crunch it gave the salad. I only used 4 ounces of feta cheese. Next time I think I use less oil and vinegar.

Butternut Squash Enchiladas

I really enjoyed making these enchiladas. I especially like the directions for cooking the squash first in the microwave. Made it so easy. Next time I might but a little bit of salsa or spices in the sour cream to give it a little more pep.

Black Bean Vegetable Soup

I made this soup tonight for a soup swap tomorrow at work. It is excellent. I quadrupled the recipe but forgot to change the amount of black beans to puree. So I pureed all but one can (instead of just half). Because my soup pot wasn't big enough I ended up taking out some of the liquid before I added it. So it is probably a bit thicker then the original recipe.

Crustless Spinach Quiche

This quiche turned out great. I followed others suggestions and used a different blend of cheeses. I used shredded mozzarella, provalone, and swiss cheeses. I also added mushrooms. This was a big hit at my Mother's Day brunch.

Overnight Blueberry French Toast

This turned out great! I followed others suggestions and used only 10 eggs (instead of 12), 1 1/2 packages of cream cheese which I added a tablespoon of splenda to (instead of 2 packages), and 1 cup of milk (instead of 2 cups of milk). I also added a little bit of nutmeg and cinnamon to the eggs. I used splenda instead of sugar and 2 tablespons of butter in the sauce. Next time I'll double the sauce.

Fruit Salad in Seconds

This was excellent. I made it for Mother's Day and everyone loved it. I used sugar-free vanalla yogurt and sugar-free whippped cream plus black berries. Yum!

Spanish Rice II

For some reason I thought making Spanish Rice was a fine art only possible in a commercial kitchen or prepared by a true Mexican cook. But alas even I could make great tasting Spanish Rice with this easy recipe!

Sugar-free French Toast Casserole

This french toast casserole was tasty. I made prepared the first part Christmas Eve night. And as other suggested, I let it sit in the refrigerator overnight. Chistmas morning I sprinkled the cinnamon sugar topping on top before putting it in the oven. I did add a teaspoon of cinnamon to the egg batter. Turned out perfect!
