So far I've made several recipes since I've started working at  The first was Butternut Squash Enchiladas.  This recipe was submitted by a fellow co-worker Elizabeth and was wonderful.  I almost had a disaster though when I forgot about the tortillas heating in the oven.  Luckily, I had more left after I burnt the first batch.  Opps!

The thrid week on the job I partcipated in a Soup Swap with fellow Allrecipeeps.  I practiced first with the Vegetarian Tortillas Soup.  This turned out great but since I didn't make enough for the swap (well actually I ate too much and then didn't have enough for the swap), I decided to make another recipe. 

My second soup was Black Bean Vegetable Soup.  This was very good.  I put cheese and sour cream on top and it was even yummier.

Next up is Mouth Watering Stuffed Mushrooms for a super bowl party this weekend.

The Black Bean Soup looks good and without the add ins is rather low cal. Thanks for sharing.

About Me
I'm a new member of the development team at Some of my outside activities include knitting, rubber stamping, running, and snowshoeing. A couple years ago I signed up for some of the newsletters in hopes that a daily email would encourage me to cook more. I need to check out the vegetarian recipes.
My favorite things to cook
The only thing I currently cook on a regular basis is my morning meal of eggs and toast and coffee. I use to cook a lot more when I was younger and enjoyed making stir fry. I'm trying to eat more vegetables and fruit so that would be a good place to start.
My favorite family cooking traditions
My mom's deviled eggs. It is a requirement that she brings them to every Thanksgiving and Christmas dinner.
My cooking triumphs
I think it will be a triumph if I start cooking at least two dinners a week!
My cooking tragedies
It is a tragedy that I don't cook much now. Seattle has great farmer markets. It is rather easy to get good quality organic fruit and vegetables.
