Let The Cooking Begin

I just completed my first week as an Allrecipes.com employee.  However, I've been a member of the site since 2008 but haven't cooked much over the last few years (okay, lets say 5 to 10 years.).  I even subscribed to the daily emails a couple of years ago.  I figured if I got an email every day, I'd get motivated to cook, right.  Um...nope. 

But still the emails came, even after I went vegetarian.  You'd think I'd have to start cooking more after that right?  But no.  Beside the daily breakfast of scrambled eggs, toast, and coffee, I haven't done much real cooking for a long time.

That means a lot of eating out and tv dinners, if you are wondering.

Don't get me wrong.  I have cooked on occasion, and I mean occasion, like pot lucks and Thanksgiving, and Christmas.  And on those occasions, I found myself looking up and using some of the recipes on the site.  I especially like this one for Thanksgiving and Christmas:
Green Bean Casserole III

So this week, as I've been going through the site, getting really familiar with it and all the features, I inevitably started added recipes to my recipe box.  But first, I had to go through it and delete all the non-vegetarian recipes I had put in there before I went meatless. Now I have only vegetarian recipes in my recipe box. Yeah!

I set up some shopping lists and in one, I add three recipes to it:
Quinoa and Black Beans
Vegetarian Tortilla Soup
Butternut Squash Enchiladas

So you can see how bad it was, I've attached before and after refrigerator photos.  It isn't so empty anymore!

Now onto cooking!  First up is the Butternut Squash Enchiladas.

About Me
I'm a new member of the development team at Allrecipes.com. Some of my outside activities include knitting, rubber stamping, running, and snowshoeing. A couple years ago I signed up for some of the Allrecipe.com newsletters in hopes that a daily email would encourage me to cook more. I need to check out the vegetarian recipes.
My favorite things to cook
The only thing I currently cook on a regular basis is my morning meal of eggs and toast and coffee. I use to cook a lot more when I was younger and enjoyed making stir fry. I'm trying to eat more vegetables and fruit so that would be a good place to start.
My favorite family cooking traditions
My mom's deviled eggs. It is a requirement that she brings them to every Thanksgiving and Christmas dinner.
My cooking triumphs
I think it will be a triumph if I start cooking at least two dinners a week!
My cooking tragedies
It is a tragedy that I don't cook much now. Seattle has great farmer markets. It is rather easy to get good quality organic fruit and vegetables.
