Let The Cooking Begin

I just completed my first week as an Allrecipes.com employee. However, I've been a member of the site since 2008 but haven't cooked much over the last few years (okay, lets say 5 to 10 years.). I even subscribed to the daily emails a couple of years
ago. I figured if I got an email every day, I'd get motivated to cook, right. Um...nope.
But still the emails came, even after I went vegetarian. You'd think I'd have to start cooking more after that right? But no. Beside the daily breakfast of scrambled eggs, toast, and coffee, I haven't done much real cooking for a long time.
That means a lot of eating out and tv dinners, if you are wondering.
Don't get me wrong. I have cooked on occasion, and I mean occasion, like pot lucks and Thanksgiving, and Christmas. And on those occasions, I found myself looking up and using some of the recipes on the site. I especially like this one for Thanksgiving and

So this week, as I've been going through the site, getting really familiar with it and all the features, I inevitably started added recipes to my recipe box. But first, I had to go through it and delete all the non-vegetarian recipes I had put in there before
I went meatless. Now I have only vegetarian recipes in my recipe box. Yeah!
I set up some shopping lists and in one, I add three recipes to it:
Quinoa and Black Beans
Vegetarian Tortilla Soup
Butternut Squash Enchiladas
So you can see how bad it was, I've attached before and after refrigerator photos. It isn't so empty anymore!
Now onto cooking! First up is the
