Fluffy French Toast

Monte Cristo Sandwich - the Real One

I used to LOVE these sandwiches years ago!!! Bennigan's used to sell them. Then I was diagnosed with Celiac disease and have not had one in years. Made them tonight with my gluten free flour and they were fantastic!!! So glad to have them again. Good recipe for gluten free too.

Gluten-Free Yellow Cake

I made this recipe for the first time 2 days ago and made cupcakes and a cake. I am the only person in my family diagnosed with Celiac disease. I made this for my son's b-day and was worried no one would like it, but they ate all but once small slice of the cake! Everyone LOVED it. Several people ate 2 slices. I followed the exact recipe and I did soak the rice flour in the milk. It was not grainy at all and was much better than the gluten free cake mixes I have made. I used the cake doctor's caramel icing recipe. I am so thankful to have a gluten free cake that doesn't taste gluten free!!!

Cabbage Beef Soup

I thought this was really good. I used chicken broth instead of water. I didn't have any diced tomatoes, but it was fine without them. I used 2 cans of kidney beans and 2 cans of tomato sauce and LOTS of seasonings. My kids loved it too. Really tasty.s

Black Bean and Corn Quesadillas

We cooked this tonight and it was great!! We loved it. The only reason I didn't give it 5 stars is because I think it would be better with some meat in it like chicken, but they were still great!

BBQ Pork for Sandwiches

We tried this tonight and my family and I loved it. It is definitely better than most or all restaurants that we have had. I wish I had not kept it in the oven for the 25 minutes that I did. I think it may have dried it out a little. Next time I will do 15 or 20 minutes.

Teriyaki Pork Tenderloin

This was a HUGE hit with my family, including my 18 month old who had 3 helpings!! My older children loved it as well and had more. Took some over to the neighbors and they loved it too! I will be cooking this again in less than a week! I added honey (lots).
