Crispy Mashed Potato Pancake

I thought these were pretty good. Its nice to do something with leftover mashed potatos...they usually get thrown out at my house. But I would change a few things next time 1) I would make the potato cakes really thin, I made them too thick and they didnt get as crisp as I wanted, and 2) maybe I would add some green onion for flavor and color. Other than that they were pretty good =)

Pita Pizza

This is a recipe where you can add any topping you like! I used chicken and green onion and peppers. I didnt have the "traditional" mozza cheese on hand so I used a little sharp cheddar. This is a great little snack that's quick to serve while watching a hockey game on TV, or as an appy at a party, or even as lunch!

Honey Glazed Ham

I thought this glaze was pretty good. I used a few pointers from past reviews such as adding some brown sugar.I also cut up a whole pineapple and used the slices to decorate my ham, and with the remaining pineapple I smashed it up and added the juice to the glaze. I also put a few cherries on the ham for color. There are a few things you should do...first off tripple up on the tin foil that lines your pan! Otherwise you end up with a nice big sticky mess. And second, you should cut this recipe in half! Its such a waste. I thought because I was making a 10 pound ham that I would need all of that glaze and honestly I used half. But other than those 2 things it was really yummy!!

Broccoli Salad I

When I was making the dressing to this salad, I was thrown off by the amount of red wine vinegar, it seemed too strong. Even after it was all mixed in it was way too much so I was actually going to throw the salad out. But we were going for dinner at a friends and this is what I made...BUT once dinner time came around and the salad flavors had time to merry it was FANTASTIC! All it needed was a little time. So I would suggest to everone DONT be thrown off by the vinegar, and make it at least 1 hour in advance! This was a great salad =)

Slow Cooker Beef Stew IV

I thought this was a pretty simple and hearty stew. I added some celery, about 1 cup also some garlic about 2 cloves. I didnt thicken it up at the end because I used russet potatos and they seemed to do the job. I made dumplings to go with it instead of bread or buns. All of the ingredients didnt fit inside my crock pot, and I have a fairly huge one. So what I did was used a roasting pan and set the oven to 350F and cooked the stew for 1 hour before turning the oven down to 200F. I let the stew cook for 5 hours stiring once in a while. It turned out great and the meat was tender and falling apart. I will make this again for sure!

Baby Back Ribs

These turned out so moist and tender! I think slow cooking them with the onion etc really added more flavor to the meat then just adding bbq sauce alone! Definately a summer FAVE!

Favorite Peanut Butter Cookies

I love peanut butter cookies and this was a great recipe. Its simple, tastes great and makes alot! I found if I left them in for the time suggested the bottoms got too dark, so I just kept and eye on them and took them out when they were slightly golden. Great recipe!

Fiesta Stuffed Peppers

These were pretty good. I didnt add an egg and I found that the meat just fell apart when eating and was kind of a mess. So I think that the egg will help with that. I added extra salsa into the meat mixture which was a good thing because after tasting them I thought they could use a little more...maybe a full cup. I put cheddar cheese on top and they were yummy! I will be making them again! Thanks =)

Chicken Wing Dip

This dip was wonderful!! It really tastes like a hot wing! There are 2 things I will do next time is 1) Add another cup or so of cooked chicken and 2) add a full cup of hot sauce instad od the listed amount(just because I LOVE the flavor of Franks hot sauce). But other than these 2 personal modifications it was a crowd pleaser!! And I can't wait to be invited to another gathering so I can make this again! :)

Springtime Potato Salad

I really enjoyed this potato salad. It's a good switch from my usual one. I loved the crunch and color the radishes gave. I used dill pickles (Im not a fan of sweet) and they added a nice little zing. This recipe is great in the summer, especially when you can use fresh radishes and home made pickles!

Fluffy Pancakes

This is the BEST BEST recipe for pancakes! They are fluffy and have a great flavor. I have never 'soured' milk before, so I was a little freaked out, but that is what gave the recipe it's wow factor! The recipe gets very thick (but it's supposed to be that way) and it makes it a little harder to pour the mix into a pan. I ALWAYS double or triple the recipe because it really only serves 3-4 people. Thank you for the recipe, it is now a family favorite!

These are so easy to make! It makes quite a bit, I had to buy another Popsicle maker thingy! I didn't have mango so I used strawberries instead and they turned out great. (Im sure you could substitute other fruits and it would be just as yummy). The pineapple gives them a good texture and sweetness, not overpowering at all. I will make these for my kids all the time. :-)

Spinach Dip with Water Chestnuts

This was so delicious. Although I will try some other suggestions on the soup mix, I used the knorrs veggie mix and I found that even though it sat in the fridge for 3 hours before serving, some of the dehidrated veggies were a little crunchie. So next time I will try the leek soup mix instead. But besides that it was still super good!

Apple-Raisin French Toast Casserole

Low-Cal Chicken

This was so easy and so delicious! I wasn't sure about the combination, but when my VERY picky daughter asks for more, you know it's good! I used 4 very small chicken breast, but if you were using any more than that I would double up the mixture. I also only baked it for 35 minutes at 400. Any more than that would be too much. :-) I will make again!
