I am twenty-seven. I have been married for 9.5 years, and we have 2 boys, 2.5 and 1. I love being a mom! I am a graduate of UC Raymond Walters Coll. Dental Hygiene Program- HARDEST thing I have ever done in my entire life! My life is good. God is good.
My favorite things to cook
I love Greek food, I love side dishes- Love, love side dishes. I just love making new things up and experimenting with new recipes. When I was a kid I had my own cooking show...well, in my mind anyway! I'm a character and it shows in my cooking. I like making many different types of food, Mexican food not as appealing to me. I love German, Greek and Irish foods, too. I love Halibut, Cod, Sea Bass and Tilapia, even though Tilapia seems flat and flimsy and not that great tasting... it's ok.
My favorite family cooking traditions
Believe it or not there really are no cooking traditions in my family. I do remember my mom making elbow macaroni and this super simple tomato sauce. Tomato sauce, a little water, butter, garlic, salt and pepper. We would eat and eat this food!!! To us is was so special! I still love it to this day. I like making food a part of my family.
My cooking triumphs
Pot Roast!!! Swiss Steak!!! My husband said, "If you would have told me my mom brought us a pot roast I would believe it! You made it just like she does!" She's been cooking for over thirty years! Pot roast down- what next?! Chili- I made up my own kinda...he likes it very much. Roasted tomatoes with balsamic and feta, Long green beans with the same balsamic and feta...simple simple yet delicious delicious!
My cooking tragedies
Meatloaf!!!!!! I messed this one up pretty bad the first time I ever made it! I called me sister in law and said, "Carla! My meatloaf doesn't look like your meatloaf!" She replied, "Tell me what you did." To which I replied, "I browned the meat..." She cut me off, "Okay Stop..." It got better, I never made that mistake again! Also, I made up a few new creations with my mistakes...and my husband actually likes them better than you-know-who's recipe!! Uh huh! So that makes me happy!!!

World's Best Lasagna
I would say this recipe is really good except we hated the Italian sausage part. It didn't make the meat sauce taste any better but gave it a weird flavor. I loved everything else about this recipe and I stayed right with the ingredients, only following other reviewers suggestions about the salt, sugar and nutmeg. Overall, I think without the Italian sausage this would be the world's best lasagna. If you like Italian sausage, you'll love this. If not, eliminate it all together or you'll wish you did! Just add more ground beef and increase the spice amounts.

Caribbean-Spiced Pork Side Ribs
Did not like the oregano with it, but then again, i'm not really an oregano person. I ended up scraping it off the ribs and adding a BBQ sauced called Irene's BBQ sauce that I found on here, and put them back in the oven. Recipes are worth a shot and I like trying new things, but this didn't work for my family. Hopefully the BBQ sauce will mask the pungent oregano flavor. Good luck!

Irene's Barbeque Sauce
I really like this recipe! It's exactly the way I like my bbq sauce! The only change I would suggest is use way less oil, as it is oily. I used just a pinch less, but next time will cut it in half. Wish I doubled this recipe, it's that good! Making ribs tonight for dinner and wanted a homemade bbq sauce to slather on them! This ones a keeper!
