Cajun Crawfish and Shrimp Etouffe

LOVED this dish and I will definitely make it again! I didn't have fish stock, so I made shrimp stock using the shells of the shrimp that I was using for the dish. Also, used 1-1/2 lbs of large shrimp and no crawfish. Sprinkled with freshly chopped parsley when served.

Lamb Chops with Balsamic Reduction

This was excellent & easy! I used fresh rosemary & added garlic to the rub. Everyone enjoyed it. Be sure to use a good quality balsamic.

Key Lime Cheesecake I

Everyone loved this--especially my husband who has a HUGE sweet tooth. I didn't use the springform pan on my first attempt because some of the reviewers said that it worked in a 9" crust, but I ended up with too much filling so I filled ramekins with the extra filling and baked them--they were also good, but I missed the crust. : ) I LOVE the version from the Cheesecake Factory Restaurant, which is creamier.

Colleen's Slow Cooker Jambalaya

This recipe is EASY and DELICIOUS! I highly recommend it! I served it both over rice and with penne pasta and it was EXCELLENT both ways. I also polled the my family, and they likewise gave the dish 5 stars. It's a definite keeper!

Roast Chicken with Rosemary

This was SIMPLE & EXCELLENT! I followed the recommendations of others and added an entire head of garlic into the cavity along with the onion & rosemary. I'm cooking two more tomorrow--another for our house and one for my mom. Thank you for the recipe! :)

A Very Popular BBQ Sauce

This sauce was great! I followed another reviewers recommendation to increase the Worcestershire Sauce & added two cloves of minced garlic. The flavor was great--I will definitely make it again.

Easy Chili I

If your home has more than one person living it it, make your life easy--DOUBLE THIS RECIPE WHEN YOU MAKE IT! I had to make it twice in one week because my attempt to freeze some for a rainy day was thwarted when my husband defrosted and ate it after we had finished up what was allocated for "immediate consumption"! This is a great recipe--if you like a little more heat, add extra chili powder & more jalapenos. :)

Mama's Balsamic Vinaigrette

The dressing is delicious! I put everything in a food processor and streamed in the oil--it came together and even when it was stored in the fridge, stayed combined. HIGHLY RECOMMENDED!

Caramel Macchiato Cheesecake

This is a GREAT cheesecake and it tasted exactly like a Caramel Macchiato! I have made it twice (no water bath)--one cracked and one didn't, BOTH delicious! I forgot to go to Starbucks for the espresso. Here's how I got my coffee strong enough: I ground it very fine and used a french press with 3X more coffee than necessary for the amount of water used and it came out great!

Juicy Roasted Chicken

SIMPLY delicious! Like many other reviewers, I was a little wary of the recipe at first--it sounded too easy, but I couldn't ignore the high ranking so I gave it a try. I used butter, not margarine and added a little garlic powder. IT WAS GREAT! I may try to cut the butter back a little, but other than that I wouldn't change a thing.

The World's Greatest Crab Recipe

I did these in the oven instead of on the grill and the flavor was fantastic! I cannot wait to fire up the grill to try them that way, too. I put them on a sheet pan in the oven at 350 for 4 minutes on each side, then under the broiler on high for 5 minutes. We ate them as soon as they came out--they didn't even make it to a plate! :)

I followed the recommendation of another review and added 1T of maple syrup and it turned out FANTASTIC! The seasonings were fine as written--I wouldn't double them as some have recommended, but if you like it on the spicy side, add cayenne.
