Egg Drop Soup II

I followed the advice of other reviewers and made the following changes: Add ~ 3 drops sesame oil, a splash of soy sauce, and finely chopped white from a green onion at the beginning. Also, use 2 T of cornstarch instead of 1. At the end, use two eggs instead of 1. These changes gave me the consistency I am used to with Egg Drop soup. I thought it was good and will make again.

Guacamole

Very good. I leave out the Cilantro and use Onion Powder instead of diced onion. Also, I like to add pepper jack cheese to my Guacamole.

Always A Winner Grilled Chicken

Excellent recipe. Like other reviewers, I added 2 cloves of garlic and left out the cinnamon. A couple tips if you're new to grilling chicken that I have found useful: 1) Trim the chicken breasts to remove fat and tendons then pound the chicken breasts so they are the same thickness throughout. This will help it cook evenly. 2) Cut small crosswise slits the length of the breast to help the marinade penetrate the meat. Make sure you don't cut all the way through. Update 9/2008 - I've made this recipe a few times now and I still love it. Since I'm only cooking for two and this marinade makes quite a bit, when I make it I buy the family pack of chicken breasts. I marinate the two I'm cooking that night and then put the others in zip lock freezer bags in the marinade (in packs of two). That way the next time I want grilled chicken, I just have to pull it out of the freezer and let it thaw and it's already marinated.

Spanish Rice Bake

After reading other reviews, I made the following changes: used 28oz can crushed tomatoes and 3/4 cup water, 1/2 cup salsa instead of chile sauce, omitted brown sugar, and omitted cilantro. I browned the onion & ground beef together then added the other ingredients to the same pot. I simmered covered for 30 minutes per recipe and my rice was cooked. I ate it with tortilla chips and topped with salsa and sour cream. I enjoyed it, but I think next time I will try substituting black beans for the beef and serving it as a side dish rather than the main dish.
