Wild Rice Stuffing Bake

This was fantastic- both my father and my husband rated it as one of the top two dishes on the table at Thanksgiving dinner. I substituted cornbread for the bread cubes and added mushrooms and water chestnuts.

Pasta With Spinach Sauce

I thought this was a great recipe and my husband also really enjoyed it. The next time I make it I will buy the 'chopped' frozen spinach, as the type I purchased was difficult to mix in with the pasta because it clumped together. I think this would also be delicious with a can of artichoke hearts mixed in!

Citrus-Ginger Flat Iron Steak

My husband really enjoyed this. I used Sriracha sauce and also subbed dry ginger for the root; however, I think the fresh would have been even better. We served it with black beans and steamed veggies.

Jamaican Me Crazy Chili

My husband, who is not prone to liking unusual recipes, loved this! I did sub chicken for the ground beef because when I think of Caribbean jerk flavoring, I think of jerked-chicken.

Make Ahead Lunch Wraps

These were easy to make and deserve 5 stars for the convenience of a make-ahead/freeze lunch option alone. After removing the wrap, we microwave these for 3 1/2 minutes and they come out great.

Feta Cheese Ball

This was delicious! I made it for a work potluck and served it with Triscuits. I originally intended to save one of the cheese balls in the freezer, but once tasted, it didn't stand a chance! The ball which sat overnight and came to work the next day tasted even BETTER! Don't be afraid of the dill, it's not overpowering and the oregano flavor really sends this over the top, it's awesome!

Key West Penne

I added capers and garlic to my sauce and sprinkled the shrimp with red pepper and basil and cooked in the tomato oil. I think spinach and/or mushrooms would also work well; however my husband says he wouldn't change a thing- he also said this is one of the best things I've ever made- which means this recipe is exceptionally delicious or I am not as good a cook as I've been led to believe!

Beef Stew VI

I followed the recipe exactly, except I did dredge the beef in flour, pepper, salt, and paprika before browning; added T each of ketchup and Worcestershire and also a few dashes of liquid smoke. Husband said it tasted pretty good.

Sunday Shrimp Pasta Bake

My husband said he really liked this, but to me it seemed like someone had just dumped a bowl of rotel-cheese dip over shrimp and noodles, which is basically all this is. C'est la vie, to each his own!

Green Chili Tomato Soup

Made this to go along with our quesadillas tonight, but it just wasn't the one for us. I may have liked it a bit better after a whiz in the food processor to puree the green chilies, but I'm still not sure that would reconcile the two flavors for us. It's too bad because I had been looking forward to making this, but next time I do tomato soup, I'll stick with trusty basil as a sidekick.

Baked Onion Dip I

I made this when trying to get rid of several pounds of onions. I used 2 large sweet onions, which was probably more than called for, but it was still pretty good. I also subbed a cup of sour cream for one of the cups of mayo.

Smoky Four Cheese Macaroni Bake

This was excellent; however, I must say I do not understand why Liquid Smoke is considered optional for "smoky" macaroni and cheese- without it, the dish is simply plain old mac 'n cheese.

Funky Frito Fruckies

I'll admit, when I first asked what was in these cookies I thought 'Fritos in cookies? Ew', but these are really wonderful!! A great, fast way to get your sweet 'n salty fix! However, I am a lightweight and could only eat a few before I had to call it quits. Rich, but extremely delicious!
