Divine Hard-Boiled Eggs

This is a great method, IF you don't live in a high altitude area. Here in our area of NM, this would give you a pile of runny egg!

Dark Chocolate Brownies

Very similar to a recipe I have used for years. Don't bother with the saucepan, just melt the butter, sugar, and water in a microwave proof bowl and mix in the rest of the ingredients. This bakes very evenly in about 35 minutes at 350 if you use a 9x9 pan instead of 8x8. My recipe used half the chips melted, and half stirred into the batter just before baking. It is still very fudgy, so maybe those who are having trouble with the batter being too runny after baking might try dividing the chips evenly. This is quicker than a mix after you have made it a few times. Just have some cold milk or vanilla ice cream ready!

Mocha Chocolate Chip Banana Muffins

Used more coffee as others suggested. Cut oil to 1/2 c. and added an extra banana. Cut sugar to 1/2 cup and used half whole wheat flour. My granddaughter wanted peanut butter chips instead of chocolate - great idea! I know this is almost a different recipe, but thanks to Shelley for the basic idea. The PB chips were very tasty with the banana and coffee flavor.

Cajun Chicken and Sausage Gumbo

Hooray, this is very like the gumbo I grew up with and still make. My roux is the color of a bar of chocolate before I add my veges. We didn't have rotisserie chicken! Now I boil my chicken the day before, put in the fridge overnight, and take off the fat before using. This is just our preference for less fat these days. Growing up, my mom just threw the chicken pieces in the gumbo and let it cook. Thanks for submitting this recipe. I, too, get so tired of so-called "cajun" recipes that are nothing like anything I ever saw in southwest La.

Sopapilla Cheesecake Pie

Delicious, but too sweet and rich for us. I only used 3/4 cup of sugar in the filling, and about 1/4 cup cinnamon sugar on top. I was on the phone to a plumber about a broken pipe, and just forgot to put the butter on top, so I melted 3 tablespoons of butter and brushed on after it baked. I drizzled with honey also after baking. It still came out just great!

Magic Cookie Bars from EAGLE BRAND®

Another good variation, especially for Christmas, is to use white chocolate, dried cranberries, and sliced almonds for the toppings. Really good and festive looking. Also, when I need a variety of cookies, I will make one half the pan the traditional way, and the other half as above, or with butterscotch chips and walnuts. Two cookie bars for the price of one.

Cranberry Corn Bread

One of my family's favorite recipes. I add extra cranberries because we don't like it so sweet, and we usually have it for breakfast. A good substitute for the buttermilk is half milk/half low-fat yogurt mixed together. I use this in place of buttermilk most of the time and it has always worked great in all of my recipes.

Deep Fried Mushrooms

Good, but does need more spice. Also used a deep fryer and fried until brown and crisp. Here is a dip I made: 1/4 cup mayo, 1 tblsp each lemon juice, horseradish, milk to desired consistency. Similar to dips we have tasted served with this dish. Will make this again with some cayenne and more garlic.
