Apricot Leather

Reviewed: Sep. 20, 2012
This seemed like a great recipe, but after several batches/days I could never get the middle to dry out or the plastic to not melt. If I turned up the heat as others did then the plastic wrap would melt into my pan. Sigh. I really wanted this to work - but I think I just need a dehydrator.

These were good, but I would omit the red pepper - mine were too spicy for the kids to eat.

San Francisco Style Bagels

Reviewed: Sep. 20, 2012
Awesome, these are well worth it and not nearly as painful as making other bagels. I made this recipe with half whole wheat flour the second time around - yummy!! Thank you so much for this recipe!!

Buttermilk Syrup

Great for french toast. The butter solidifies in the fridge, so it needs to be re-heated.

Chili Rellenos Casserole

Reviewed: Aug. 25, 2010
I give it a five stars with my alteration. I used fresh chilis from my garden, put them under the broiler, then let them set to cool. Remove seeds and skin. However canned chilis would have been easier and I'm sure I'll use them come winter. The "batter" needs to be doubled with the addition of 2 more eggs. Also, to make your own quick enchilada sauce (I didn't have it on hand, and tomato sauce alone sounded gross), use a can of tomato sauce + 1/8 c chili powder, 1/2 T oil and some water. Heat to boiling then simmer. Of course the initial cooking time needed to be increased with the addition of ingredients. But it is wonderful and very similar -but easier - then chili rellenos that my DH makes.

pretty good, I like the fact that I'm getting veggies (pumpkin) into my kids and not just sugar.

Fresh Green Chile Quiche

Reviewed: Oct. 31, 2009
This is a great recipe - I have made it 2 times. My changes are this: DO NOT ADD feta Use only 1/2 cup instead of 1/4 cup. I got a lot of compliments on this dish. I think it's a great base for a quiche BTW - crumbled bacon might be good on top - but I haven't tried it yet.

Chicken Pot Pie IX

Reviewed: Oct. 31, 2009
really yummy. The kids didn't like the philo dough as suggested by another reviewer - so I will use pie dough next time. We used ramkins - which made perfect little portions of personal pot pies. :)

No-Noodle Zucchini Lasagna

Reviewed: Aug. 17, 2009
great way to use up extra zucchini! mine was not watery at all, but I did pat dry each zucchini before layering in the lazagna and I did a simple sauce (from my own regular lazagna) instead of the one with wine.

I served these at a "tea party" for my daughter. Everyone loved them and none were left over.

Zucchini Brownies

wonderful way to use up zucchini! I put it in an 8 x 8 square pan instead. I used splenda instead of the sugar in the brownies and whole wheat flour. I did the frosting as per the recipe! Wonderful!

Crazy Cake

Reviewed: Jan. 12, 2009
Very good and easy, but my advice - DO NOT make it in the baking dish. Instead, please use a bowl and pour the mixed ingredients into the baking dish. I began by following the recipe exactly - pfff - I had to pour it into a bowl to get it mixed right and then pour it back into the baking dish. What a mess!!!

No Bake Cookies III

Reviewed: Jan. 12, 2009
Old fasion oats work as well as quick cooking in this recipe. I did need to add more oats to this then the recipe called for. I've made these cookies since I was a little girl. I now use rapadura or sucanat in the place of half the white sugar and add about 1/4 cup flax seeds that I've ground in my blender. It helps to make them a bit healthier, but they're still good. They are still crazy good!

The Best Rolled Sugar Cookies

perfect. I used 3 cups unbleached flour and 2 cups freshly ground red winter wheat. They were lovely! I also added a dash of nutmeg. WOW - the best sugar cookies I have ever made! Oh yes, I did have to cook them a bit longer, but my cookies were thick and kind of big.

Darn Good Chicken

Reviewed: Dec. 3, 2008
I removed the skin from the chicken before rubbing it with the mixture. Also, I think doing just chicken breasts would have worked out better for my family. Other then that my really picky kids (and picky hubby) ate it up like it was ice cream. I served the chicken with jasmine rice and asparagus.

Grandma's Egg Custard Pie

This did not turn out well for me. My family loves custard, but they would not eat this pie. I thought the taste was good, but it wasn't pretty like custard.
