Roasted Chicken with Risotto and Caramelized Onions

Wow......terrific risotto! The combination of the onions, roasted chicken and balsamic vinegar work very well together. I made mostly as directed, but took previous posters' suggestions and added dried oregano and basil to the simmering risotto and a little sugar to the onions after cooking.....brought out the flavors a bit better, I think. I also added a generous helping of grated Parmesan at the very end to up the creaminess factor of the risotto. This one's definitely going in the recipe box!

Green Bean and Potato Salad

Like other reviewers, I found that there was simply too much dressing and my veggies drowned. :( However, I am planning on using that dressing as a chicken marinade overnight tonight. Loved the flavor - seems very versatile!

Sweet, Sticky and Spicy Chicken

I made this as directed, and the flavor was great! "Tastes like restaurant Chinese food, Mom!" was my 6-year-old's comment. Only thing I would change would be to make more sauce to allow for more of that great flavor to coat the rice. The sauce was also good on steamed broccoli, which I served with the dinner.

Famous Chicken Adobo

Great flavor! I followed the recipe as instructed, with one small change. My daughter does not like chicken bones, so I used boneless chicken breasts cut up into small pieces. Adjusted the cooking time down a little to compensate for no bones, and it's fabulous! Thinking of making this at our next family get-together.

Oh man......this is one amazing chicken dish! We love it served over sticky rice, and I usually double the sauce. Definitely a keeper!

Bolognese Sauce

Wow was this delicious! Prepared as directed, although I left out the mushrooms (I'm allergic). Makes a lot - just the two of us, so will reheat for great leftovers this week. Wonder if the flavor deepens over time, like cacciatore or minestrone?

Breakfast Casserole

I omitted the chicken due to a family member with allergies, and doubled the ham. I thought it was just okay, but with a bit of tweaking could be very flavorful. It is very rich and very filling. Needs a bit of seasoning (black pepper, ground mustard, a bit of Worcestershire sauce maybe?). The crushed potato chips on top were a hit with the kids, though.

Slow Cooker Salisbury Steak

Really great flavor! Even though I used extra-lean ground beef, there was still quite a bit of oil in the slow cooker when this finished cooking. Also, as previous reviewers have mentioned, in the future I'd like to find a way to reduce the amount of sodium.
