Oatmeal Pancakes II

Pretty much the best homemade pancakes I've made yet. And more healthy than most! I didn't have buttermilk so just used regular low fat, threw in some cinnamon, mixed wet and dry ingredients separately and then combined, with no food processor, and voila! The whole family ate them up.

Zucchini Apple Bread

This was a big disappointment. I made this a week or so after making Blueberry Zucchini bread which was the best, most moist z bread I've ever made, so my expectations were high. But this bread came out dry and a little bland. I don't think I did anything wrong following the directions, but it cooked in half the time and as I said it was dry. I believe the flour to oil ratio is way off. I won't bother trying to fix it though because next time I'll just use the Blueberry recipe and substitute apples for the berries.

Blueberry Zucchini Bread

Possibly the best zucchini bread I've had! The blueberries add such a nice, moist touch and I don't know if I'll ever be able to enjoy zucchini bread without them now. I cut back on the sugar and will cut it back further to about 1 1/2 cups next time; also like others used half oil half applesauce and 1 cup of whole wheat pastry flour. I made two regular size loafs and they cooked in just under one hour. I froze one loaf and it was just as good a week later.

Maple-Pecan Pork Chops

This was quite good and very easy. I made it after work, served it with steamed green beans and fresh corn on the cob, along with home made apple sauce. All from the farm market. A simple, but really nice, in season meal. I didn't really change anything in the chops recipe.

Berry Oatmeal Muffins

I was so excited to make these based on the great reviews but then so disappointed. Don't get me wrong, I ate 3 of them! But my family was so underwhelmed. My picky 12 yr old took one bite and wouldn't have any more. They were heavier and denser than I'd expected and I think that's the issue with kids. One note - I didn't use quick cooking oats, it might make a difference to use those instead of the regular. The flavor was great for me but with that response I won't make them again unfortunately.

Winter Fruit Salad with Lemon Poppyseed Dressing

Oh my god I loved this salad, with a few changes from suggestions here. Made it for Christmas Eve dinner. Used a bit less sugar, canola oil, one head of boston and one head of red leaf lettuce, definitely skip the cheese, and use pecans! Roasted pecans made the dish.

Chicken Scarpariello

I never have time to cook a real meal after work, but I did it with this recipe. It was delicious! Tasted like far more effort went into it. I used thin sliced boneless breast, but did not cut it into pieces, just used the whole breast halves to make it even easier. Used a cup of chicken stock instead of water and bouillon. The rosemary flavor was heavenly! Will definitely make again many times.

Favorite Old Fashioned Gingerbread

This was great, no reason for a different ginger bread recipe ever. I took people's advice and doubled the spices (could even use more) and added some applesauce. It was incredibly moist and delicious. Make home made whip cream with it.

Cranberry Pot Roast

This was the first recipe from this site that was a miss for me. My husband liked it, and I liked the flavor in general, but it was greasy! It felt like because it cooked in its own fat for hours it was coated with fatty grease. I would not make it again unless I could find a way to fix that.

Baked Orange Roughy with Veggies

I made this for Christmas Eve dinner and it was a great dish for entertaining. It was easy, I just chopped everything ahead of time. The only changes I made was to use lemon juice instead of orange, and add garlic and parsley. I mixed all of that with the veggies and put it in the fridge until I was ready for it. It kind of marinated, which I think helped the flavor. Very easy and delicious. Skipped the parm.
