Yummy recipe! I took another users suggestion and substituted the ricotta / sour cream with fat free cottage cheese. Still very rich, filling with great flavor!

Pesto Polenta Lasagna

I thought this recipe was just ok even with modifications. It may have been that I didn't use enough polenta b/c I couldn't tell it was even there. I just tasted sauce and cheese. the flavors were great i just wanted to "taste" more of the base. next time i will def use more polenta! oh and having never worked with polenta before i had no idea it was encased in a liquid...a slight surprise when i opened the package.

Southern Candied Sweet Potatoes

Excellent, I used "I can't believe it's not butter" instead of real butter...i also cooked with the lid on for 30 mins, then removed the lid to cook for the last 30 (on low heat) to allow the sweet potatoes / sugar to caramelize! i don't think the vanilla was necessary so i didn't add it, the nutmeg and cinnamon were more than enough!

i made these for breakfast and LOVED them, the boyfriend commented multi times how great they were! even with my modifications THESE WERE PERFECT...i used half wheat flour / half white flour; i used almond milk instead of cows milk and butter instead of shortening! you can modify a recipe and still have great results! this recipe is a keeper for us!

Its difficult to rate this recipe overall it was good, not great. not very lemony, doesn't brown very well... Overall with modifications (more lemon, scalded milk, etc) make it better, just not great..

Eggplant Parmesan II

i thought this was a GREAT recipe...the only changes i made were baking a little longer (approximately 12-15 mins/side)... like another reviewer i kept the skin on and if you cook it properly there is absolutely no problem eating it, the skin is very tender...i also made my sauce from scratch...now i thought it tasted GREAT but does have a slightly bitter flavor, i actually don't mind it but next time i may sweat the eggplant first...either way i loved it and will definitely make it again!

Delicious Black Bean Burritos

i think i first made this recipe over a year ago and i loved it then... to cut down on the fat i used a fat free sour cream instead of the cream cheese, i added frozen corn and ground turkey... i used whole wheat tortilla's! one of the BEST most flavorful recipes i've found. i love it, i'll be making it again tonight (without the ground turkey)!

the receipe was VERY good, like other's stated i added cajun seasoning, added turkey sausage and shrimp... everyone LOVED it! i've had multiple requests for the recipe and to make it again! i'm making it again tonight, this time i'm also adding okra!

Oat Bran Muffins

I loved this recipe! These muffins are so yummy and so moist and so healthy! I made these 2 nights ago and have been telling people ever since! I did make some modifications, I used splenda brown sugar in place of the dark brown sugar. Egg whites in place of the eggs and reduced the oil to 2 tbps. I used WHEAT bran instead of OAT bran (i didn't have any) and whole wheat flour. Based on other users suggestion, I decreased my baking powder and soda to 1 tsp each. I used a/b 1.5 cups of applesauce as well (all natural strawberry apple sauce & some regular organic, unsweetened applesauce). I added a dash of cinnamon as well. To half of the batch i added frozen blueberries. To the other half i added raisins soaked in orange juice and just a touch of the orange juice. They had SUCH a great flavor! I will likely make more tonight! This time adding a mashed banana! thanks again this is a GREAT recipe!!
