Penne with Spicy Vodka Tomato Cream Sauce

This was awesome. I added a little bit extra red pepper since we like spicy. Also followed the 1/4 cup of vodka, 3/4 cup of cream that another reviewer posted. Other than that, just followed the posted recipe. Could probably go for a bit less oil next time, but still 5 stars for sure.

Chicken with Chipotle

Delicious. I slow cooked the chicken at 300 until it hit 180 degrees, then simmered it in the sauce for 15 minutes. Was falling off the bone, tender and moist. Also added an extra chipotle pepper and about a teaspoon of garlic powder to the sauce. Very, very good.

This was really tasty. Will add some green onion and fresh cilantro at the end next time. My wife (who is Chinese) actually liked these more than I did since she has a love for rice noodles that borders on the absurd. She also claims that the pork and mushrooms (we added sliced mushrooms) should be fried up in the sauce with some fresh ginger and a little extra salt. Anyway, well done! Thank your husband for us.

Spinach Basil Pesto

Really tasty. I had no nuts of any kind, so I toasted some fennel seeds (1 tbs) and added them. I know that has no connection taste-wise, but i figured it needed a little crunchy texture. It was really delicious on some angel hair pasta. I'll try it again with some pinenuts sometime soon.

Couscous Pepper Cups

Really tasty. I didn't have pine nuts or celery, but the couscous was still delicious. The red pepper...didn't do it for me. I actually put some roasted red pepper hummus I made from another recipe on this site on the side and that cut the sweetness from the pepper that held the couscous. Still 5 stars for sure. Loved the apple and raisins.

Orange Muffins

Great stuff. Cooked at 350 for 20 mins instead of 400. Added 2 tsp of cinnamon, 1/3 cup of brown sugar, 4 tbs of unsweetened applesauce, an extra tsp of zest (because I overdid the zesting) and used freshly squozen tangerine juice (all suggested by various other reviews). Also added some juice/powdered sugar glaze, as suggested. Very delicious but more of a dessert than breakfast muffin.

Bagels II
