Extra Easy Hummus

Awesome starter recipe for a tahini-free hummus. I tend to add more spices (whatever I'm feeling at the time) as well as a tablespoon of lemon juice, a little more garlic and an extra tablespoon of sesame oil along with the olive oil. More fat, but gives it that sesame taste. Unless you don't like that sesame taste and that's why you're making a tahini-free hummus...

Bourbon-Mango Pulled Pork

Made this while I was in China and really missing non-Chinese BBQ. Because of my location, I couldn't find a few of the ingredients. I used Chinese vinegar in the liquid and tossed in a quartered onion and a head of crushed garlic. I also added 1/2 cup of bourbon to the cooking liquid along with two cups of chicken broth, instead of water. Instead of chipotle peppers, I used some tiny Chinese peppers that I found in the veggie market and chopped them up really tiny and added them to the liquid as the pork cooked for a bit of spice. For the sauce I made a honey bbq sauce and added the mango chunks, bourbon and regular chile powder in a blender, then simmered it for about 10 minutes and added it to the pulled pork, minus the liquid, mango pits and onion. I didn't leave them together in the slow cooker for 1-2 hours...everything was already cooked. Just until the sauce is basically absorbed.

Bagels II

Recipe was solid. My first time making anything involving yeast and thanks to this fairly simple recipe, I don't have to buy bagels anymore. Eventually the ingredients should pay for themselves :)

Couscous Pepper Cups

Really tasty. I didn't have pine nuts or celery, but the couscous was still delicious. The red pepper...didn't do it for me. I actually put some roasted red pepper hummus I made from another recipe on this site on the side and that cut the sweetness from the pepper that held the couscous. Still 5 stars for sure. Loved the apple and raisins.

Oatmeal Grapefruit Quick Bread

The outside of this bread was so hard I had trouble biting through some parts of it. The inside was too soft, and was only saved by a few minutes in the toaster oven. The bitter aftertaste of the grapefruit ruined a pretty decent initial flavor. I made a juice icing with powdered sugar, but even that couldn't save it. It might have been better in muffin form as it would have been more evenly cooked.

Greek Pita Pizzas

Awesome. I cut out the tomatoes because I don't like the chunks, but otherwise I pretty much followed this exactly. Did 4 or 5 leaves of fresh basil and stuffed olives with anchovies and garlic, and did the hummus thing on the edge that turned out crispy and amazingly delicious. Also added a bit more cheese than the recipe calls for because...you can't have too much cheese. Awesome recipe.

Orange Muffins

Great stuff. Cooked at 350 for 20 mins instead of 400. Added 2 tsp of cinnamon, 1/3 cup of brown sugar, 4 tbs of unsweetened applesauce, an extra tsp of zest (because I overdid the zesting) and used freshly squozen tangerine juice (all suggested by various other reviews). Also added some juice/powdered sugar glaze, as suggested. Very delicious but more of a dessert than breakfast muffin.

Tomato-Cream Sauce for Pasta

I changed just a little bit to give it a stronger taste. 1/2 tsp salt, 1/2 tsp black pepper and 1/2 tsp crushed red pepper. With parmesan on top of a bowl, it was amazing. I also used fresh tomatoes (peeled and seeded) instead of canned. 5 medium tomatoes seemed to replace the can pretty well.

Penne with Spicy Vodka Tomato Cream Sauce

This was awesome. I added a little bit extra red pepper since we like spicy. Also followed the 1/4 cup of vodka, 3/4 cup of cream that another reviewer posted. Other than that, just followed the posted recipe. Could probably go for a bit less oil next time, but still 5 stars for sure.
