Broiled Tilapia Parmesan

Slow-Cooker Chicken Tortilla Soup

This recipe was great. I used a cooked chicken from Boston Market and let it cook with the bones in. I added a big can of chopped tomatoes and a big can on green chilies. It was yummy. The tortilla strips were also easy to make and worth the effort.

Chewy Whole Wheat Peanut Butter Brownies

I like these brownies but they aren't very sweet or rich. I added chocolate chips to the batter and cooked them for at least 45 mins but I had an 8x8 pan. Pretty yummy:)

Artichoke & Spinach Dip Restaurant Style

This was very yummy. Silly me, I forgot to chop the spinach! This made it hard to eat so try to remember to cut the spinach before mixing it in. I doubled the recipe and used 1/2 fresh spinach (10oz bag) and half frozen and 2 cans of artichokes. I also added a few tablespoons of plain yogurt, some black pepper and a few drops of Tabasco sauce. Be careful not to add any salt because it is very salty as is. Doubling the recipe made way too much, I'd stick to how it is unless you have a huge party. I garnished it with fresh diced tomatoes and lemon wedges and served it with some french bread slices and wheat thins. It was a hit!

Autumn Cheesecake

This was the first time I've made cheesecake and it was easy to make and quite delicious. I followed the suggestions of using 1 and 1/2 times the cheese filling, microwaving the apples and adding a little butter and graham crackers to the pecans for the top of the cake. The cake was not too rich and looked really nice. It was even better the second day after being in the fridge all night.

Ranch Dressing II

This dressing was quick and easy to make. I used plain yogurt instead of sour cream and I skipped the chives because I did not have any on hand. It turned out great.

Fish Tacos

Wow, this recipe is outstanding. I have never deep-fried so I was a bit little nervous. It was very easy and the fish turned out perfectly fried, almost like it came from a fish n' chips place! I bought a liquid (candy/deep fry) thermometer and kept it in the deep pot I used with 2 pints of vegetable oil. The temperature fluctuated a lot but this was to be expected (it went between 350-400). Making the beer batter was quick and easy and after a few minutes in the hot grease the fish (I used fresh grouper) was golden, crisp and yummy. The sauce was also outstanding. I had to use chili powder instead of cayenne pepper because I didn't have any. It was still good although I'm sure it changed the flavor from the original recipe. I served the tacos with lettuce and toms because my grocery store didn't have any cabbage! Also, I think that frying the tortillas is unnecessary and too greasy. I think it would be better to heat them in the microwave. It was delicious and my family was impressed and loved it.

Slow Cooker Chicken Stroganoff

This recipe is very, very rich. I only had five hours so I put the chicken in on high with the butter and Italian seasoning. I think this really dried out the chicken, my mistake. Next time I will start earlier.

Baked Fish with Shrimp

I used suggestions to make this sauce better but it was very difficult to make it flavorful and delicious. I do not recommend this recipe for new or intermediate cooks who are not able to change the sauce on their own. As is, the sauce is not good. I do however think the basic idea behind this recipe is good!

Red Enchilada Sauce

This recipe really tasted like an Italian red sauce. I even modified as suggested by other cooks, adding more chili, etc. and it still wasn't very good. I was bummed.

Zucchini Bread IV

Excellent. I used 3 cups of zucchini and substituted pecans. I also used 2t of cinnamon and 1t of nutmeg. I made two batches and gave my neighbors each a loaf. They also loved it and asked for the recipe.
