Twins for Halloween
Bob and Me
Engagement Night
My sweetheart, Bob, and me in Boca Raton, FL
About this Cook
Married mother of 3, step-mother of 3, and have twins on the way(due March 2011). And grandmother of one. Also, a legal assistant. Just an "all around" happy person!
My favorite things to cook
Baking cakes. People swear all the time that I bake the best cakes they've ever tasted. I love to surprise my co-workers with different types of cakes now and then.
My favorite family cooking traditions
Boiling seafood (crawfish, crabs and shrimp).
My cooking triumphs
Just putting a smile on peoples' faces through my cooking skills.
My cooking tragedies
Ummm lasagna and I are not the best of friends...over and over and over I tried to make amends, but "it" just doesn't feel the love.

Green Chicken Enchilada
DELICIOUS and super-easy to make (used a rotissiere chicken).

Six Can Chicken Tortilla Soup
EXTREMELY simple, and very tasty! The only negative thing is the color...just reminds me of dirty mop water. Next time I will drain my black beans, maybe that'll make it look a little better.

Orange Juice Cake
This cake tasted really good...but this is the first of many bundt cakes I've made over the years that would NOT come out of the pan. It ended up breaking in half!!!! I used a lot of Pam and thoroughly coated the pan, just like I always do. I used satsuma juice instead of OJ, so MAYBE that's why but who knows? It did taste really moist and I did receive good comments about it (after I pieced it back together and used a melted cream cheese icing drizzled on it!)
