Chicken Taquitos

Linda Mclean had a great idea using the flour tortillas and steaming them in the microwave. I tried the corn tortillas and they crumbled. So I got out my flour tortillas, microwaved them, prayed oil on a cooking sheet and spread the tortillas with olive oil. Stuffed them, and baked at 500 for 10 minutes. Perfect. Oh and I used m.Jack and sharp cheddar cheese. So good!

Cincinnati Chili I

OK. I feel horrible giving it 3 stars, but I hated it (I would have given it 1), but the Mr. and my friend loved it. In fact, they ate most of it. I had a bit and it was manageable to eat, but I couldnt get over the smell/taste combo. It tasted ok. But while it was cooking, it smelled like the spicy oatmeal cookies I make. So it was weird thinking oatmeal cookies, but tasting chili...My weirdness aside, the entire batch was eaten in a few days. I've never had this chili, so I cant compare it to anything, but there's my two cents...

Super-Awesome! I used coconut rum with spiced rum and thought it turned out great! The almond, pineapple, coconut combo was really nice. So refreshing, it went down almost too smoothly!

Amaretto Sweet and Sour

Super Awesome!! I LOVE amaretto sours, and now I love this one too (they're just a tiny bit different). I just did equal parts amaretto, sour mix and oj. Easy to remember and easy goin' down!

Fruited Ice Cream

WOW! Great ice cream recipe. I've got cantaloupes growing all over the place, so I thought cantaloupe ice cream would be an interesting version of this recipe. I chopped the cantaloupe and added 1 cup of skim milk to the blender. It purred up nicely! Since I halved the recipe, I ended up using 5cups (with the 1 cup skim milk included) cantaloupe puree, another 1 cup skim milk, 2 cups heavy cream, 1 tbsp vanilla a pinch of salt and 1 (14oz) can sweetened condensed milk. Made sure it all all blended well and put the mix in my small ice cream maker. 20 mins later we had the most flavorful cantaloupe ice cream! I picked the fruit straight off the vine and within an hour had ice cream. Dang good ice cream, too. WOW.

Chocolate Velvet Ice Cream

GREAT recipe!! I've made this several times and have noticed that unless you scrape the bowl many times during the mixing process, the choclate doesnt mix all that well. And you HAVE to add the cream painfully slow as you mix, stop and scrape, mix and add cream, stop and scrape. It seems like it takes forever (because the ice cream is so good it's painful to wait for!), but its worth it because you wont have a glop of chocolate at the bottom of the bowl when you pour the mix in the ice cream maker. And when I process the chocolate chips, I leave them kinda chunky becuase its fun biting into the chocolate when you eat the ice cream! I'm pretty sure that this recipe would be AWESOME with extra stuff like oreos, toffee bits, mini marshmallows, maraschino cherries, etc!

Best Burger Sauce

Really good sauce! I suppose I'd give it a 4.5 if I could, but chose the 4 star because it was really good, but didn't knock my socks off. The flavors went well together and it was good on the burger.

Country Fried Steaks with Sweet Onion Gravy

I made this recipe tonight and it worked out great. Really easy to put together and the gravy was great with the sides I made. Add the cayenne pepper, you cant tell it's in there, it just gives the whole thing more flavor. The gravy was really easy to make, I'll be making this again for sure.

Christmas Breakfast Sausage Casserole

I gave this dish 5 stars because it was easy to make and tasted really great. I took the advice of a few reviewers (that's what it's for, right?) and put in 2 cups of milk and used 8 eggs with the 6 slices of toast and maple flavored sausage. Both the kids and 5 adults finished off the entire dish!! I put this together and then put it right in the oven. I dont think it turned out slimey or too stiff. Awesome recipe, I'll use this again for sure!

Parmesan Herb Bread

I gave this a 5-Star because it has 5-star potential. I followed the recipe as published, using my bread maker. First, I added some chopped garlic, about a clove, or maybe 2 tsp of the garlic in a jar. GREAT addition. However, my experience was that the 2 cups of water called for is WAY too much. I had to add an aditional 2-3 cups of flour. And because I added so much more flour, it diluted the parmesan and oregano taste (I should have realized that when I was adding the flour; duh). So next time to fix all of my problems, I'm gonna add 1 cup of water, and only more as needed. I'll add the garlic, and do the rest as directed. Oh and I put some parmesan cheese in some butter and smeared it all over the top once it came out of the oven. AWESOME! Other than all the trouble with the water, it was really wonderful and in fact, this bread was what we had for dinner. Just the bread!! I think I'm gonna make some more of this right now!!

Lettuce with Hot Bacon Dressing

WOW. I've been back and forth on this. I thought it looked good when I found the recipe. Then I made it and got a little weirded out before I ate it. 3 bowls later, I suppose it's pretty good. I gave a sample bite to "The Mr." and he liked it too. It didnt taste like the vinegar like I was worried it was gonna. It coats the lettuce nicely and gives it a bacon flavor. I used shredded sharp cheddar cheese, diced the egg up really small and put it over a spring salad mix. Really good, made for a nice lite lunch!!

Swiss Chicken Casserole II

WOW this is good! I've added it to my favorites file with a few revisions. I took the advice of a few other reviewers and added another can of soup. I've made this recipe several times and have mix up the varieties of soup used, and they've all been great. I also slathered on extra cheese because, I believe, the more the better! I also added a bit more milk because I wanted the sauce a little more "saucy" and a little less "casserole" (to pour over the noodles I served it with). I was amazed that the stuffing mix and the soup added enough flavor because I didnt add an extra seasoning ingredient and it was wonderful!!

Award Winning Soft Chocolate Chip Cookies

These cookies were SO GOOD!! I actually caught MYSELF in the bed with the tin of cookies!! I knew at that point I had to give a few more to my neighbors or I'd have an extra (and unwanted) 10lbs on my backside!! So the neighbor's son was happy to take them. All the neighbors were, actually. They kept really well and were softer than the usual Toll House. I gave one to The Mr. and the first thing he said is "They taste like those soft batch ones. Those are my favorite". For those who reviewed the recipe and didnt like it, just add the pudding straight out of the box. And if you didnt get soft cookies, you probably over baked them. I always reduce my oven by 25 no matter what, and bake the goods an extra minute or so. It makes everything softer and more moist. Cakes, cookies, muffins, everything! I wont need any other chocolate chips recipes after this one!!

Hearty Oatmeal Pancakes

This is a really great recipe and stands up to its name! Now I had a hard time deciding between 4 and 5 stars, but picked 4 for these reasons: I made it as written and it was good. But I liked it better after I added some applesauce, more milk, apple pie spice, and even mini chocolate chips to some and raisins to some. I think I might like the texture (more like traditional buttermilk) if grinding the oats first. But I encourage you to try it and make it your own. Top it with syrup, nutella, etc. You wont be sorry!

Homestyle Turkey, the Michigander Way

WOW! I made this turkey for my first complete Thanksgiving dinner and it is sooo good. In fact, I went and picked up a few more turkey because it was so good I knew I didnt want to wait another year to have it again. SO easy to make, and I made sure it was done not by the time it had baked, but the internal temperature. I think I ended up cooking it a bit longer than the directions said, but when I did take it out, it tasted perfect! SO moist and juicy. And to get a bit of crisp from the crust, I uncovered it and increased the temperature (also helped cook it faster!). I've collected a bunch of turkey recipes (didnt know which one to try), but dont need them anymore because this is #1!!!! Also from the butter, bouillon and chicken broth it made excellect drippings for gravy. I'm telling you, the BEST Thanksgiving I've EVER had!! Next year at my house everyone!!!!!

Cocktail Meatballs

I made this recipe as is for a potluck at work. Most of the time the stuff I bring (recipes from this site) is a huge hit, but since I hadnt made this before, I didnt tell anyone that I broguht the cocktail meatballs. But when I looked around the room, and nobody had them on their plates, because they had eaten them all, I fessed up! Anyway, super easy recipe to make (prepared them the night before and refrigerated until the morning, turned on the crock pot, and finished just in time for lunch!) and even easier to eat! I had never used chili sauce before, but I picked up a few bottles, and have made dozens of the meatballs and froze them so I can whip up this recipe at a moment's notice!! I also used a small cookie scoop to ensure all the meatballs are the same size, and baked the meatballs as directed, but I used a 13x9 pan with an elevated rack to help them cook evenly. PERFECT!!

Oven-Fried Pork Chops

This is a super yummy and EASY way to make chops. I used to swear that I couldnt cook pork to save my life, but I followed the 10 min each side directions in the recipe and it was GREAT! All the ingredients I had on hand and it took just seconds to drop each chop in the egg ,then crumbs, and into the oven. In fact, usually I can get all the dishes in my dinner done at the same time, but these cooked SO fast that I had them ready before everything else! For sure using this recipe again!

Wine Marinade

Apparently I dont like soy sauce. I've never used it before, and I think I let the pork sit too long in the marinade. But once I cooked it, ALL I could taste is the soy sauce. I think if maybe I used the teriyaki (which I KNOW I like) instead, it would be great. It really added a lot of flavor to the meat, "The Mr." noticed and commented on it, and liked it, but I just couldnt get past the soy sauce.
