Mexican Casserole

Made this for a family gathering at the beach. I added green chilies and used some taco seasoning as several other reviewers recommended. I also increased the meat to one and a half pounds. Everyone really enjoyed this. Recipe as written: 4 stars. Delicious. Thanks for posting!

Marmalade Glazed Pork Roast

I'd really give this recipe 4.5 stars. I made it for company and followed the recipe as written, but added some baby carrots to the pan veggies for a little color. Delicious! The pork was tasty, juicy and tender. I just wish there had been more pan juices. And next time, I'll be even more liberal with the salt and pepper. Delicious recipe, Dartanyun. Thanks for sharing!

Pizza Casserole

4+ stars! This recipe is a huge hit at my house! We make enough to have leftovers. Following other reviews, I used Italian sausage instead of hamburger, miniature pepperoni slices, and a layer of cheese in the middle. Also added a bit of Parmesan cheese on the top (that's my Wisconsin roots coming out)! Next time, I'm going to try adding more veggies, including zucchini--but it's great as written. Thanks for sharing, Melissa.

Oven Roasted Teriyaki Chicken

Used red wine vinegar, low sodium soy sauce, and half the garlic. Basted every ten minutes with additional sauce. This turned out GREAT--moist and juicy, even after an hour in the oven. Will definitely make this again. Thanks! Great recipe for two or a crowd!

Honey Mustard Grilled Chicken

Black Bean and Corn Quesadillas

These were a huge hit at my house! I lightly butter the top tortilla before flipping to ensure both sides brown up equally. Otherwise, this recipe is good just as written. Thanks for sharing, EFasse!

Sweet Pea Mockamole

This recipe was fun and very tasty. I followed the recipe but reduced the garlic and red pepper just a bit for my family's taste. My husband loved it. I might make this again for a party, but I have to say that I doubt my friends would mistake it for guacamole after the first taste. Thanks for sharing, Cactusue! Very nice little appetizer dip.
