I have been making this casserole for years - it's one of my comfort foods. I always top it with cheddar and sometimes bread crumbs and bake it at 350' for 30 to 40 minutes to finish it off. I have to force myself to stop eating more - it is that good!

Mushroom Pork Chops

This is the recipe I've been making for over 30 years - with one addition. Before browning the chops, I coat them liberally with yellow mustard. Don't bother with oil in the pan - the browned mustard fond is what gives the dish its savory flavor, and the soup will release what's stuck to the pan. My mother made this when I was young, but used chicken rice soup. I prefer the cream of mushroom. I like the addition of onions and mushrooms. Oh, and it's always served over wide noodles, by family tradition.
