Black Bean, Corn and Turkey Chili

Reviewed: Nov. 8, 2008
I'm making this recipe again today because it is sooo good. Here are my tweaks: I don't use any chili powder because I am a spice wimp and I use chicken stock instead of chicken broth to provide a more full flavor. I would suggest measuring out all your spices, cutting up your onion, and opening/draining the cans of beans and corn before you start cooking. It just makes it easier.

Very good. Throw a littile butter in the pot while they are boiling.

Awesome Slow Cooker Pot Roast

Reviewed: Dec. 30, 2009
I was generous with my rating because I halved the recipe for a smaller roast so that may have affected the way it turned out. My husband and I were not crazy about the way the cream of mushroom-onion soup mix tasted. I guess other people like it, but it just wasn't that good. I seared the roast like others suggested, but we were disappointed with the taste of the sauce. Too bland. I tried to spice it up after I tasted the sauce, but it was just too far gone. This recipe was okay, but I won't make it again. I am going to try to find one with some red wine, maybe some beef broth, and some more flavor added. And with searing in the directions at least!

Slow Cooker Chicken Stroganoff

Reviewed: Jan. 1, 2010
My husband and I loved this. Based on other reviews, here are the tweaks I made. Used butter instead of margarine, only half of the dry Italian mix, and only half of the cream cheese. I added some pepper, lemon pepper, parsley, garlic powder, and Italian seasoning to make up for not using all of the dry Italian mix. Some othe other reviews said that it was too salty so that is why I didn't use it all. I added some sauteed onions at the end just to kick it up a notch! I tossed the egg noodles in the crock pot (about 2/3 of a bag) when it was ready to serve. For step one, I melted the butter and combined the Italian mix before putting the chicken in. For step two, I cooked it for about an hour. We will definitely make this again. My husband and I both rated this about 8 out of 10 which is very high on our scale!

Best Ever Brisket

Excellent. We left out the 1 tablespoon salt per the other reviews. We didn't miss it at all-- It was delicious! This was such easy preparation/cooking too!

Crunchy Rice Casserole

Reviewed: Jun. 13, 2010
Followed the directions as written except I cooked the rice in chicken stock and seasoned it to give it more flavor per the other reviews-- there has to be something more flavorful than corn flakes... This is a nice weekday filler for dinner, but it didn't quite make the five star mark.

Ground Turkey Noodle Bake

A bit dry and bland, but an average dish. We are always looking for ways to use ground turkey so we will keep this recipe on hand.

I give this a four star rating for chip dip, but this is not an entree by any means. Yummy chip dip though :-)

We love honey dijon so this dish was a nice weeknight meal. It was just average though-- nothing Earth-shattering.

Best Steak Marinade in Existence

Reviewed: Feb. 20, 2011
Delicious. I didn't have any Tobasco so I just put a small pinch of Cayenne Pepper in there, and I didn't have any white pepper so I put some cracked black pepper in there. Otherwise, made it as written! We marinated our t-bone steaks for about four or five hours, and they were amazing. We will definitely use this again.

Grilled Garlic Artichokes

Reviewed: Mar. 27, 2011
Gets three stars because it did not say to take out the "choke," the flavor was not enough at all, and trimming the top of the artichoke is not specified (i.e. cut off the top 1/3?). My husband and I feel like three stars is generous. Not sure why the reviews are so high-- maybe we are just crazy!

Savory Grilled Corn

We usually half recipe for just me and my husband (2 ears). This recipe is fantastic and cheap. A lot of the coating cooks into the foil so feel free to be generous with it on the corn! Great recipe.

Spinach Turkey Roll

Reviewed: Sep. 18, 2011
I made it exactly as written. It was definitely below average (hence two stars). It is bland, and the flavor it does have is less than impressive. Sorry! It appears that most people who rated this higher didn't make it as written.

This was really good-- I made it as written. I gave it four stars because we will use less sugar next time. It was way too sweet for us BUT great salad, and I will definitely alter the recipe to use it again!

Pecan Pie V

Reviewed: Dec. 4, 2011
This was absolutely fantastic! I hate the gooey syrupy pecan pie, and this one was just delicious. We had leftovers all week because not many people were at our Thanksgiving, and I had it for a few mornings with coffee which as it turns out is a to die for combination. Especially with this particular recipe. I followed the advice of others and changed the baking time to 350 for 15 minutes with foil around the edges of the crust then 300 for 50 minutes. I use the refrigerated Pillsbury crusts in the red box which always work perfectly. I highly recommend this recipe.

Grilled Portobello and Mozzarella

Reviewed: Jul. 21, 2012
Loved this, and we will make it again. We only had two portabellas so we had to eyeball some of the measurements, but they turned out delicious! We used shredded cheese instead of slices because we didn't have slices, but it got the job done. I also added a little bit of freshly ground black pepper and garlic powder, but they still would've been good without that. I served them with whole wheat cheese tortellini. I was going to take a picture of them so that there could be a picture for this recipe, but we literally could think of nothing else but eating them immediately when they came out of the oven LOL. Oh well.

Too Much Chocolate Cake

Reviewed: Jan. 13, 2013
I made this for Christmas Eve dinner's dessert. Although I cook and bake all of the time, it was actually my first chocolate cake to make from scratch. Everyone loved it! And I loved making it! I have trouble frosting cakes so drizzling chocolate on a perfectly formed bundt cake worked fabulously and was very impressive. I followed the directions exactly, after watching the wonderfully helpful and comforting associated video. The only thing I did was melt half milk chocolate and half semisweet morsels in a little cup, transferred the melted chocolate to a ziploc with the corner cut off, and drizzled chocolate on top to make it look like one of the pictures-- this part is non-negotiable! This recipe is simply awesome.
