Spanish Rice Bake

I made this in an attempt to have a "made-ahead" dish, and to please everyone at the table. I was pleasantly surprised at the flavor because I've made similar recipes that turn out to be so-so, but this had a bit of zing that everybody liked. My daughter loves all food except rice, and even she enjoyed it!

Chicken Breasts with Balsamic Vinegar and Garlic

I found this recipe just OK. The kids liked it but I found the vinegar masked the flavor or the garlic, mushrooms and chicken. Since the kids liked it I will make it again though....but reduce the vinegar, increase the garlic and add some onions.

Slow-Cooker Barbecue Ribs

To ensure a thicker sauce I cooked the ribs on low for 3 hours with the cover on and then removed the cover for another 2 hours. Letting the ribs cool for an hour afterward also helped the sauce thinken up. We LOVED these ribs....as close as you can get to the real thing without a BBQ. Very moist and delish.

Mexican Bean Salad

I love this salad. The cilantro really sets the tone for the taste....it has just the right amount of spice. The only change I made was to omit the salt and added chopped fresh green and yellow beans. The crunch they add is a nice added touch.

Sloppy Joes II

This was a little ketchupy for me but my kids liked them. Next time I may cut back slightly on the ketchup and substitue with something like chili sauce or tomato sauce. Will definately make again.

Slow Cooker Chicken Stroganoff

We found this to be tasty and rich but heavy on the cream cheese. Next time I think I will cut the cream cheese in half and use a half can of cream of mushroom soup or some sour cream. I will make it again for sure though....my sisters want the recipe in my next cookbook :)

Curried Cauliflower

The only reason I couldn't give this a 5 star is because I had to modify some of the ingredients based on what I had in my kitchen. I used 1/2 fat mayo and low sodium cream or chiken soup. I only had approx. 1 teaspoon of curry powder left so had to use some tumeric and cumin in place of the second teaspoon of curry. It was fabulous! Everybody except my 9 year old son loved it....and since the smell of curry makes him nauseous I didn't expect him to like it. Will be making it often.

Banana Banana Bread

I reduce the sugar to 2/3 cup, leave my bananas slightly lumpy and bake for 55 minutes. Perfectly flavorful with pockets of intense moist banana flavor.

Home Style Macaroni and Cheese

I did forget to add the mustard so thought I would add it to the crumb topping at the end...and I also made too many breadcrumbs (didn't measure, just dumped)but it was still fabulous! We loved it...and will make it time and time again!

Creamy Tomato Soup

We loved this soup. My daughter especially liked the chunks of tomato. It was rich so next time I will decrease the cream cheese by half and add a bit more skim milk. I made this a second time using a can of crushed tomatoes instead of tomatoe chunks to please my son, reduced the cream cheese to 1/2 (used low fat cream cheese) and added enough skim milk to make it "soupy" to my liking. It was fantastic!!

Slow Cooker Turkey Breast

I don't know what I did wrong but my turkey was just bland with lots of juice in the bottom of the pot. It was also tough but I assume it was my turkey and not the recipe. I will try it again and rerate it if it turns out better next time.

Baby Greens with a Warm Gorgonzola Dressing

As I was reading this recipe I realized I forgot to mention that if you use it as a pasta sauce you need to omit the vinegar....for obvious reasons. I also wouldn't mix the entire batch of sauce with all of the greens but drizzle each serving with a little bit. Fresh sliced pears and/or candied pecans work very well with this salad.

Barbie's Tuna Salad

This is a wonderful sandwhich mix. I used a light Miracle Whip but because of the tang I think light mayo will work better....will definately make again and again especially for functions. Thanks!

Black Bean and Couscous Salad

This salad was delicious. I didn't have green onions so used a small onion and diced it very small and I doubled the dressing. Next time I am going to use green onions and increase the cilantro. I also think a drizle of maple syrup would be a nice additional flavor...but I have to try that. This will become a healthy, filling low fat staple in my home. Thanks!

Curried Mango Chicken

Just so everybody knows, you can buy mango chutney in the grocery store. Here in Nova Scotia it is in the foreign food section with other spices and sauces. It's easier than making it from scratch.

Downeast Maine Pumpkin Bread

I thought it was very moist and flavorful, but although I used a very low flavor oil and cut back on it I could still taste it. Next time I am going to substitite half of the oil with apple sauce. This recipe also makes great muffins. I got one loaf and 12 muffins out of one batch. I baked the muffins at the same temperature for about 18 minutes.

Slow Cooker Macaroni and Cheese II

I thought this was a very tasty, rich cheesy recipe. The cheese overcooked so separated and the milk curdled so it wasn't so pretty to look at. I think my slowcooker cooks faster than most because almost all recipes on this site overcook if I follow the directions. I wouldn't cook this any longer than 2 hours on low total. I added the noodles raw and shut off the slow cooker and they were cooked perfectly in about 1/2 hour without any heat! I will make this again reducing the time dramatically. Thanks.
