My Crab Cakes

I didn't have the Old Bay Seasoning, but these were the most fantastic crab cakes i've ever had. phenomenal. will definately be a familiar recipe at home.

Black Bean, Corn and Turkey Chili

Delicious! I didn't have any chili powder on hand, so I substited for 1/2 tsp cayenne. I used red kidney beans instead of black beans, and chopped tomatoes instead of salsa.

Apple-Cranberry Crisp

I LOVE this. I was hesitant that the combination of granny smith and cranberries would be too tart, but the cinnamon and sugar balanced it out perfectly. I doubled the crisp topping. I made this for a Christmas Eve party at my aunt's house, and my husband dug into it while it was sitting on his lap in the car.

Yummy Cheese Ball

Great cheese ball. I prefer the pecans finely chopped. Cook the bacon slightly longer so it's nice and crispy and easy to crumble.

Heavenly Potatoes and Ham

I always look forward to ham leftovers from Christmas and Easter so I can make this. I've even made it as a side dish without the ham because it tastes so much like my mother's delmonico potatoes. It's just as good reheated for breakfast.

Red Skinned Potato Salad

This is now my standard go-to potato salad recipes. It gets requested year-round, not just for summer BBQs. I use 5 lbs of potatoes, leave out the eggs, and add celery seed and garlic powder.

Vidalia Onion Pie

So good. I leave out the hot sauce 'cuz I'm a big ole' sissy. But I serve this for brunch, lunch, or dinner. I'm making two this Christmas, one for my father-in-law and one for my husband's grandfather.

Brown Sugar Fudge

I found this recipe because I had planned to make Maple Walnut fudge and couldn't find maple extract anywhere. So I found this. My first batch came out far to soft. The second batch came out so hard it was brutal to cut. But it was sooooo delicous. Melt-in-your-mouth delicious.

Chicken with Artichokes and Goat Cheese

Very good. I used low-sodium chicken broth, but substituted marinated artichokes for frozen, and fresh cippolini onions for frozen pearls. Next time I'll eliminate the added salt and dilute the stock a little so it's not as salty. I served with mashed potatoes and asparagus. Hubby proclaimed it one of his favorite dishes.

Chicken Tinga Tostados

I wasn't a fan, but with some modifications, I could be. I used the ingredients exactly as specified, only I threw everything in the crockpot and cooked on low for 6 hours. The chicken was so moist it fell apart when I shredded it. I used the entire 7 oz can of chipotle peppers and adobo sauce. The flavor was so smokey and overpowering, you couldn't taste anything else. And I was just not a fan of the overall flavor of the adobo. I'll leave it out next time.

Holiday OREO Bark

The first batch I made, I crushed the oreos in a plastic bag with a rolling pin. The oreos came out too fine, so the second batch I crushed the oreos into large chunks by hand. When I cut the bark, the larger chunks would fall off the bark.

Brie Pecan Rollups with Raspberry Sauce

I was disappointed with the overall finished product. Straining the raspberry seeds was a pain. I used Perdue thin sliced chicken cutlets, and after they were stuffed, rolled, and secured, they took forever to cook through.

Impossible Coconut Pie II

Definetley reduce the amount of eggs. It tasted too egg-y, like a coconut omlet, and like other posters said, the "crust" tasted rubbery. I don't know if I would make it again, but I would reduce the amount of eggs, increase the coconut, and use a shortbread crust.
