Turkey Veggie Meatloaf Cups

Quick and easy and great for leftovers for the lunchbox! The second time we made these, we added some frozen zucchini and carrots to the veggie mix to help extend the turkey a bit more. This made the turkey cups a little more moist than the previous batch so I believe we'll increase the amount of couscous by a tablespoon or so to help off-set the extra water from the frozen veggies. We also used a barbeque sauce that was more spicy than sweet and we liked that much better. The recipe is a good base from which to give rein to your cooking creativity!

Easy Cinnamon Fudge

Easy and tasty. That's my type of recipe! I added a bit more cinnamon than what the original recipe calls for and also added a touch of cardamom because I like the combination. Next time I'll add some instant coffee or Via from Starbucks so it gives a mocha flavor to the fudge.

Roasted Brussels Sprouts

Ann's Shrimp Etouffee

This was a yummy recipe but way too much butter for my Weight Watchers program. I reduced the butter, substituted olive oil when I could and used nutritional yeast to help maintain the butter flavoring. It turned out quite well and pretty tasty. I'd make it again for certain.

Bat Cupcakes

Cute and popular at our bake sale event. If you make them the day before be aware that the moisture from the cupcakes softens the cookie "wings" and causes them to break off at the level of the icing. The next time I make these, I'll hold off on positioning the "wings" until just before serving.

Spooky Witches' Fingers

Oh yea. This was a huge hit for our office bake sale. Sliced almonds rather than whole almonds look more like fingernails and adhere to the cookie easier with the gel. I had to keep the dough chilled when rolling it into fingers because it gets sticky when it warms up. Next time I'll try to wrap the dough around something crunchy in the center so it mimics a finger bone.

Magic Wands

Fun and easy although a bit on the messy side with the youngin's "help". I melted chocolate chips in the microwave (watch the time - chocolate burns!) and used a pastry brush to make sure there wasn't too much glopped on. Sprinkling the sparkles with a spoon over the warm chocolate was easier than rolling the wand in a pile of candy bits. Lay them on wax paper and tuck them in the freezer for a few minutes to harden the chocolate and quicker than you can say Abbracadabbra! You've got a sweet treat.

Cinnamon Hazelnut Biscotti
