Kalua Pig in a Slow Cooker

We've been to Hawaii a couple of times and loved this dish. I've played around with it and it taste better when it's made according to the directions. We serve it over hot steamed rice...delicious!

Fiesta Chicken with Black Bean Salsa

I've had this recipe save for almost a year and we've made it about a dozen times. It is incredibly flavorable and extremely delicous. I make it according to the directions and it comes our perfectly every time!

Curried Coconut Chicken

This recipe was pretty good. I wasn't too sure about the coconut milk but you didn't even know it was in it once the final product was finished. I think I might add more tomatoes to it next time. Overall pretty good and well received with my kids.

Pecan Pie Muffins

I don't really care for pecan pie but my husband adores it. So, I thought I would give these a shot because the ingredients didn't seem like the result would be too sweet for my taste. THEY WERE FANTASTIC. The absolute best pecan recipe I've found. I have made them at least a 1/2 dz times since Thanksgiving and had to e-mail this recipe to at least 15 ppl. SOOO GOOD! Plus, my husband dug them so much I wasn't forced to make the actual pie this year! THANKS!

Paul's Pumpkin Bars

These turned out pretty good. My only complaint is that they were more like cake bars then actual "bars." I didn't make the frosting as others suggested it made it a little too sweet so I made a simple homemade whip cream and it was perfect!

No Bake Cookies III

pretty darn good but of course my cookies didn't harden. I looked around at other recipes and most tell you to have the recipe at a rapid boil closer to 2 or 3 minutes. I will try to make them again just boil the liquid a little longer next time.

Very easy recipe and turned out nicely. I would say that if you don't have a food processor then it takes a little more effort then the details imply but overall really good!

Cream Soup Base

Made this today for our lunch today. Fantastic starter recipe. I made potato soup and I would recommend using real butter and letting it brown a little before adding the flour then saute a little onion and garlic before adding the milk. The base was a little thick but instead of adding additional milk I actually added some chicken stock from leftover chicken and noodles the day before. Everytime I added more liquid it would be 1/2C at a time with 1/2 cup stock then 1/2 cup milk. I also recommend seasoning your potato soup with a little basil and topping with cheddar and bacon...VERY GOOD! THANKS!

Cuban Ropa Vieja

I usually shy away from reipes that call for flank steak as the meat tends to be too tough but I thought this turned out pretty good. It definately needed some salt and some cilantro. Served over rice but next time I think i'll make some homemade tortillas!

Very very good. We used chicken and sausage because most of my family won't eat shrimp. Very easy recipe and my kids really enjoyed it. Topped with a little bit of sour cream-yumm-o!

Slow Cooker Chicken and Dumplings

Per the suggestions of others, I added some vegetables. I think this was a huge mistake. The addition of vegetables (I chose corn and carrots) made this dish more like a slow cooker pot pie. I am however not giving this dish a 4 because of that I am rating it a 4 because the 2 10oz packages of dough was WAY too much (I have a rather large slow cooker) and the cooking time for the biscuits was grossly underestimated by the author. Not only did I let the biscuits cook for a half an hour more then suggested I had to take another suggestion and finish cooking in the oven, which in turn took an additional 20 minutes. On a smaller note I thought the onion could have been scaled down to about half as well. My suggestion: cook the recipe as is with half the suggested amount of "dumplings" and about half the amount of onion.

Orange Cracker Apricot Chicken

The cracker crust on this chicken was great but the perserves on top weren't well recieved by my family. The only thing I would suggest is keeping the perserves under the broiler for a little longer then suggested.

Curried Honey Mustard Chicken

I've made this twice now and I love it. My son really loves it. My husband seems to think it's a little too swet so we've opted to cut the honey in half next time, so we'll see how it goes!

Pesto Chicken Florentine

I thought this was pretty good and my family liked it. The only thing was....we like our chicken florentine with a little more alfredo flavor, and with a thicker sauce. I used a fresh pesto and homemade noodles and it was pretty good just not what we expected.
