Oatmeal Butterscotch Cookies

My husband loves Oatmeal Scotchies, but I've always had trouble with them falling apart. I used 1 cup of butter as one reviewer suggested and baked for 9 minutes at 350 as another one suggested. Success at last!!

Classic Caramel Corn

Easy,delicious and presents lovely in a cellophane gift bag (if it makes it that far!). My guys gobble this up as soon as it's ready. I recommend real butter and dark Karo syrup as opposed to margarine and light Karo syrup.

Cinnamon Coffee Cake

So, I made this because I had a BUNCH of kids coming to my house early in the am on short notice and I happened to have all the ingredients. Needless to say, it was a huge hit! Feeds 7 hungry kids and three harried moms nicely.

Danny's Macaroni and Cheese

This isn't quite mac and cheese as anyone who read the ingredients should know...That said, it's a top of the line quick, cheap and oh so yummy dinner. Use the italian flavored tomatoes for sure and cover with foil until mostly done. I uncovered it and raised the temp a bit to get the "crunchies" on top. It's my 11 year old son's favorite comfort dinner.

Kielbasa with Pasta

It's funny, I came up with a similar recipe a few weeks ago. Day before payday pasta. I use kielbasa, butter and garlic sauteed (sometimes I add onion), then add cooked, hot spaghetti, grated parm and fresh spinach. YUMMO!

Crunchy Caramel Corn

Best Ever Muffins

Easy, and made from ingredients I regularly have on hand. Great with fruit but also good filled with jam or fruit topping in a pinch - just adjust the sugar amount.

Chicken and Rice

This recipe is delicious as it is written and I usually hate it when people fool with a recipe and then critique it, but tonight I did just that. I had mushrooms languishing in the fridge that I needed to use up, so I sauteed them with an onion in butter, added water and cooked the rice in the same pan. Then I added the cream of chicken and canned chicken. I had a quarter of a bag of shredded cheese and my husband doesn't like things too creamy, so I popped the mixture into a casserole dish, topped it with a little cheese, and baked it at 375 for about 20 minutes to crisp up the top. It received rave reviews at our table. I do think next time, I will use cream of mushroom or maybe a mixture of cream of chicken and cream of mushroom.

Taco Pies

I used ground turkey b/c it's cheaper than ground beef. I also added taco seasoning and cooked the onion with the ground turkey. My guys really liked it and the second pie froze really well ( I didn't bake it until ready to use and obviously didn't add the toppings). Will be making this again. Cheap and good!
