Asian Lettuce Wraps

Very good, I followed the recipe exactly except for substituting the ground beef for the ground chicken breast. It turned out really well and we all loved it, even the kids. Based on my experience with Asian cooking/food, I think it would be best to add sesame oil at the end when you turn the heat off or you lose the fragrance/flavor of the sesame oil. And you only need 1 teaspoon and that would cut the calorie down as well.

Clone of a Cinnabon

These are the best, they are so yummy. Since I didn't have a big enough surface to make one huge rectangle shape, I cut the dough in half and made 2 rectangles and still rolled it the way I would have if they were big. Worked out perfectly and they were so good this is a keeper recipe.

Strawberry and Feta Salad

Silver Dollar Pancakes (Gluten-free)

These are great pancakes. I know the recipe creator Elana Amsterdam (I have her cookbooks) recommends NOT using Bob's Red Mill Almond flour because they are not as fine as what she used to test her recipes with. Before I knew that, I was using Bob's Red Mill Almond Flour and was getting really grainy oily outcome from her recipes. I recommend switching to something else.

Jim's Cheddar Onion Soda Bread

Though it's not a traditional Irish soda bread recipe, this ended up being my favorite soda bread recipe. I have tried 3 or so Irish soda bread recipes in the past but never found any of them to be interesting enough to try making them again. Not this one!! I used Irish sharp cheddar cheese and fresh onions to make the bread and we just loved it. I will definitely make them again, maybe adding fresh herbs next time like chives or dill.

Sloppy Joes II

We normally don't like sloppy joes but I made this for friends who got together to help us put a swing set together. Everyone like it a lot including my hubby who doesn't like sloppy joes too much because it's too sweet. I made it with organic ketchup which has less sugar than the normal ketchup. If I were to make this with normal ketchup, I would reduce the amount of brown sugar even more so it's not so sweet. Also, I used very good quality garlic powder (makes a huge difference). A keeper!

Spiced Pot Roast

Very good recipe. I actually cooked this in my slow cooker all day. I had a 4 lb. chuck roast which I salted and peppered, seared all sides in my pan and didn't bother to put flour on it at all. I then put the meat in my crock pot and put the rest of the ingredients and cooked all day. After 6 hours, I shredded the beef and put it back in the crock pot to absorb all the flavors. When we had dinner around 7 PM, it was very juicy, moist and flavorful. A keeper recipe.

Lemon Pie Bars

After reading some reviews, I had decided to 1.5 times the filling and keep the crust the way it is. These were amazingly delicious. I have tried different lemon bar recipes but always found them to be too strong of egg flavors or something else, not lemony enough for me. These are perfect. I will be making this over and over again. Now, only if I can stop myself from eating more than one bar at a time...

Cranberry Orange Loaf

I tripled this recipe and made a lot of loaves to share with my friends and family. Everyone loved them. I did use the frosting on top but I think I will skip next time as they are plenty sweet without it. They loved the festive colors as well.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

I tried this recipe because it was rated so high AND I like Pam Anderson's recipes. Boy, am I glad I did. I halved the amount of pork I used because I was only cooking for 4 (and we still have lots of left over) but used the full amount of everything else (stuffing and sauce etc.) for the pork. It tasted soooooo good and I am not even a pork easter. I hardly cook pork because I cannot stand the smell of it but this tasted really good and I didn't notice the odor/smell I dislike of pork. I will be making it again.

These were just very delicious. I followed the recipe exactly and chose pecan for my nuts. For those people who don't like the taste of whole wheat, I must tell you that you cannot taste it at all. I will definitely make them again.

Boilermaker Tailgate Chili

Authentic or not, very good and spicy chili. For kids and myself, I used sour cream to tone down and it was really good. My husband loved it spicy the way it was. I will definitely make it again.

I followed the recipe exactly and they turned out really yummy. I had ground rosemary so that's what I used instead of regular kind. I didn't find them too garlicky either. I did make sure the garlic was finely crushed and minced.

New Orleans Corn Bisque with Smoked Sausage

This was such an easy recipe to follow and turned out pretty well. It was quick to make as well. I used smoked sausage with no casing (my kids and I don't care for the casing) and used a half olive oil and a half butter as well as almond milk in stead of regular milk because that's what I had. I was afraid that the flavor was going to be off because of the almond milk but it tasted pretty good, thanks to the smoked sausage. We all liked it. I did not serve it with cheddar cheese or parsley but it tasted good anyway.

Double Almond Chocolate Chip Cookies (Gluten-free)

These cookies are very delicious, I make them for my boys who love chocolate chip cookies (trying my best to feed them healthier alternative to regular cookies). The first time I made them, I didn't know that Elana's recipes don't come out right if I use "Bob's Red Mill's Almond Flour" and the cookies came out very greasy and crumbled all over. They tasted good but they were not very pleasant to look at. Since then I got her cookbooks and found out that she cautions people to not use Bob's Red Mills almond flour because they are courser in texture and don't work with her recipes. She has recommendations on her website on which flour to use. Since I switched my almond flour, they come out great. Thought people might want to know since Bob's Red Mill is the most common brand in supermarkets.

Rhubarb and Strawberry Pie

This was a good pie recipe. I had actually made a 10" pie but kept all the ingredients the same and it worked out great. I personally don't care for the smell of rhubarb so next time, I will add some lemon juice and/or lemon zest to kill/mask the smell of rhubarb. Or maybe some orange juice and/or zest. My kids and hubby were very happy with the pie, though.
