Wonderful Gluten Free White Bread

I made this bread yesterday for a friend who is gluten intolerant. She loved it and said it tasted very good. I followed the recipe exactly using the white rice flour, I am going to try with brown rice flour per her request next time.

Spelt Waffles

These waffles were great, my entire family loved them. I followed the recipe exactly but next time, I will probably add about 2 tablespoons of palm sugar (to go with the coconut theme) since the waffles had no sweetness what so ever. I will also reduce the amount of salt to 1/2 t or even 1/4 t since it was salty to my liking. Also, after carefully measuring out my canned coconut milk, I realized that 1.75 C of coconut milk (I guessed it but I had to be sure) was exactly a can of coconut milk so people who are making this in the future can just pour it directly into the bowl. I will also sift spelt flour in the future. Thanks for the recipe.

Schwabischer Kartoffelsalat (German Potato Salad - Schwabisch Style)

This was very easy and quick to make yet resulted in good salad. I used organic red skin potatoes and left the skin on and used white distilled vinegar. Followed the recipe exactly. Will make it again.

Creamy Avocado Cucumber Soup

I made this exactly...and both my husband and I didn't care for it. We thought it was kind of weird. WE love everything that is in it so I thought we might enjoy it. First, my limes were very juicy so I feel that I only needed 1 or maybe 1.5 lime(s) instead of 2 juiced. I also think there is something missing like cumin or cayenne pepper or something to give it more flavor or a kick. My husband ate it with lots of hot sauce since he found it kind of bland and I ate it for the benefit of my health.

Chef John's Blueberry Muffins

These are very good. I ended up with 24 muffins instead of only 16 and only needed about 23 minutes or so in my oven. I know that the muffin pan sizes vary so if you end up with more than 16, start checking after 20 minutes to make sure you don't over bake these.

Grandmother's Buttermilk Cornbread

This is our favorite cornbread recipe, I have tried different ones over the years (and I have tried many) and have decided this is it for our family. It's very moist, just the right amount of sweetness, goes well with chili or just by itself. My kids love these as well, they just cannot stop eating them. I use low fat buttermilk and it's plenty rich.

Raspberry Almond Coffeecake

I had a high expectation, I guess. It didn't really impress me at all. The cake turned out looking beautiful, tasted just okay, my family liked it enough to finish their share but I didn't feel it was significant enough to want to repeat making it again.

Fresh Broccoli Salad

This really was the best broccoli salad I have ever made/had. I was too lazy to cook the bacon so I added about 1/3 cup of bacon bits and that was perfectly fine. I also replaced white sugar with raw cane sugar A.K.A. Sucanat. My 7-year-old loved it so much he ate a huge bowl full which made it worthwhile for me. I will be making this soon in the near future for sure.

Fettuccini Tomato Rustica II

First of all, this recipe says it serves 4 people but it's more like 6-8 servings. I only had a little shy of 1 3/4 lbs. of chicken and I thought that was plenty. I also thought that you do not need 1 cup of olive oil to make this work. I fried my chicken in my non-stick pan with no oil (came out beautifully) and used a tiny amount of oil when I was mixing the sauce, chicken and noodles together. It tasted okay but not worth the calories, though with the modifications, it should cut a lot of unnecessary calories (and will serve way more than 4 people.)

Avocado, Tomato and Mango Salsa

These are indeed very good! I did modify to my liking as I went, though. I used 2 mangoes, 2 avocados, 1/2 finely minced red onion and no olive oil. The rest are the same. This is a keeper and I am posting the tweaked version on the website.

Grandma McAndrews' Irish Soda Bread

I have tried different Irish soda bread recipes only to be disappointed in the past but this one is so good I might end my journey to find the best Irish soda bread recipe now if I can stop being curious :) I followed the recipe exactly but used currants instead of raisins which shouldn't have changed the end result at all. It's a big keeper!

Oyakodon (Japanese Chicken and Egg Rice Bowl)

This is a good recipe for Oyakodon. However, if you really want to make it authentic Japanese, you will have to use Japanese short grain rice. We never use Jasmine rice in Japanese dishes because the texture is not right and the aroma doesn't mix with the flavors of other ingredients well. Other than that, the recipe is a good solid one!

Ham Loaf I

This was a hit at our house. I did follow the recipe ingredients exactly but my loaf was done in 1 hour as well. Had I cooked longer, it would have been dried out. I do think the recipe ends up being quite salty from the salt in ham so next time, I would omit the salt completely and won't even bother with the 1/8 teaspoon it calls for. I also think 8 servings for this recipe is conservative, it is would serve at least 10 people or more, unless you are feeding hungry football players :) Great recipe.

Quick and Easy Pizza Crust

Love this crust. I have been using this recipe for "spontaneous pizza dinner" for the last 3 years. It's quick to make and tastes great. I love the no rising time. You can do everything while you are heating the oven and getting all the toppings ready. It's a winner!

Sesame Asian Tofu Stir-Fry

This is a good recipe. For people who are complaining that it's too greasy, you can certainly use less oil and it shouldn't be a problem. Also, if you have a problem with the sauce not sticking or being too thin, you can add a little COLD water to a little bit of corn or potato starch in a separate small ball until dissolved and add that right before you turn off the heat to thicken the sauce. You can also add arrowroot directly into the sauce to thicken the sauce before you finish cooking/turning off the heat.

INCREDIBLE Raspberry Cheesecake Cookies

I am sorry to say that I din't care for these cookies at all... I even went out of my way to find and order raspberry chips just to make these cookies because there were so many raving reviews about them. First of all, I didn't enjoy the strong artificial flavors of these cookies. Second, I didn't like the textures of them. Since I was determined to like these, I made them 3 times to make sure I didn't mess up anything but I still didn't care for them. My 6-year-old did like them, though. But my 4-year-old didn't like them at all, either. So there it is, my honest review/opinion. Hope it helps.

Cranberry Apple-Nut Pie

I agree with one reviewer who said this was too sweet. I did use tart granny smith (the fresh ones which are even more tart) and fresh cranberries (used all 12 oz.) but the pie still turned out very sweet. I also should have increased the amount of flour as I added a little more cranberries than the recipe called for. Next time, I will decrease the amount of sugar, still use all 12 oz. of cranberries (1 bag) and add 2 Tbs. or more of flour to make sure all the juices absorb. The flavor combination was good so I plan on making it again with the modifications.

Cheeseburger Meatloaf

Very easy, basic but good recipe. I did follow another reviewer's suggestion and put cheese in between two layers of meatloaf mixture and that worked out great.
