Mustard Crusted Tilapia

Spinach Stuffed Chicken Breast

Very good basic recipe, next time I will definitely pre cook the bacon, and probably use the bacon grease for flavor. I'll have to experience with seasonings though

Best Ever Jalapeno Poppers

These were fantastic, I made them with a slightly higher ratio of bacon:cream cheese, and with pepper jack cheese. I didn't blanche the peppers before hand, as some reviewers did, I just fried them for a few extra minutes, about 5-6 each.

Homemade Black Bean Veggie Burgers

Very tastey, I made a double batch and froze the leftovers - they were perfect for a quick meal. I don't have a food processor, so I just diced the veggies, which came out fine in my opinion - but I don't like smooth veggie burgers that pretend to be hamburgers anyway.

Pumpkin Drop Cookies

Very good, a little cakey. I made 1/2 the batch with chocolate chips, and 1/2 with the icing. Both were good, but its really the icing that makes these cookies great. I would also recommend letting them sit for about 24 hours - they seemed to be better the next day.

Parmesan Spinach Balls

I halved the recipe and added 3 pieces bacon, next time I think that I'll chop up some artichokes also. Everyone raved, I barely got to eat any!

Onion Rice Pilaf

I added some chopped mushrooms (as suggested) and upped it to 2 cups broth. Silly me, I used sodium free broth and unsalted butter so it came out a little bland. Next time I will add 1 clove garlic and sautee it with the onions, as well as a pinch of salt. Still, very good.

Spanish Rice Bake

This was good, and I will definitely make it again, but with some modifications. Add some chili powder to give it a little kick, and next time I'll probably add some jalapenos to spice it up. Don't skimp on the cumin, or the water. I might use beef broth next time, to add an extra touch.

Chicken Enchiladas V

Delicious - I omitted the green chilies, replaced them with about 5oz of medium salsa. I reduced to only 1/2 an onion, and added 1/2 a green bell pepper. I also reduced to just a dash of chili powder and replaced w/ 1 tbs of taco seasoning. To top it all off, i replaced the cream of chicken with cream of mushroom and it came out fabulous.

A-Number-1 Banana Cake

This recipe is FANTASTIC as banana bread. I replaced the buttermilk with sour cream, added a dash of cinnamon to the flour mix, and omitted the salt altogether. I baked for 45 minutes, and it came out perfect. It is so moist and sweet, you don't need any frosting, just server as is.
