Penne and Vodka Sauce

Made with fat free half and half and threw in some garlic with the pancetta. It was awesome!! I made this while I was roasting brussel sprouts (also from this site) and the timing worked out perfectly.

Roasted Brussels Sprouts

I made this for the first time last weekend. I've made it two more times since then, it's that good! I halved the sprouts which helped some of the outer leaves come off in the roasting process, and cooked them at 400 for about 40 or 45 minutes, stirring every eight minutes or so. You definitely want some of the loose outer leaves in there because those are the best part! You want them dark and crunchy, they will look burned but they are so good. I added garlic once and it was good but not necessary.

Bacon Cheddar Deviled Eggs

I made these for a family lunch and they've become my signature dish. They are requested every time we get together now. I used the Hormel real bacon pieces and chopped them up finely. I put all of the filling in a freezer bag and piped it into the eggs. Yum!

Pesto Grilled Cheese Sandwich

It's very easy! Definitely use cheddar instead of American. I also tried it with turkey instead of tomatoes but the tomato sandwich was definitely better. You need the freshness of the tomato to cut through the oil of the pesto and the butter. Very tasty!!

Pesto Chicken Florentine

Amazing! I just used the whole package of spinach as well and used shrimp instead of chicken. Also, I've found that I prefer to use fusilli noodles (or some type of spiral noodle) because it holds the sauce better.

Pesto

This is an amazing pesto recipe. I got lazy a few times and messed with the measurements and it wasn't nearly as good. Be sure to toast the pine nuts. The oils that come out of the nuts have such a rich flavor, it makes all the difference.

Salsa Chicken

This recipe was really good but, most importantly, it was soooo easy and I had all of the ingredients at home already! I didn't measure out the taco seasoning or bother putting it in a bag, I just poured some on the chicken breasts, patted it in, and flipped them over and did it again. Based on another review's suggestion, I used the Pace thick and chunky. It was great! I used Old El Paso's low sodium taco seasoning and medium salsa and it wasn't very spicy. Next time I may do something to kick up a bit.

Chicken Stir-Fry

This is really good but I can never get the sauce to turn out just right. I also have to add liquid to it or add corn starch to thicken it. But either way, the flavors are always really good and it reheats well.

Caprese Appetizer

I made these for a shower and they turned out very well but I slightly modified the recipe. I cut the tomatoes in half and speared half a tomato, a piece of basil (small leaf or half a large leaf, NOT chopped), half a mozzarella ball, and then the other half of the tomato. I salted and peppered and then added balsamic vinegar. I also used the mozzarella that was in italian herb seasoning at the store. It was great! Can't make these too far ahead of time though because the basil will wilt a little bit.

Annie's Fruit Salsa and Cinnamon Chips

This was sooo good! We made it for a baby shower and only put a tiny bit of brown sugar (no white sugar) and it was perfect. Also, we made it the night before and the shower was at 2 the next afternoon and it was fine. We followed the reviews and saved the apples and only cut them just before the shower. We used gala apples and cut them pretty small. I'm not sure that you would've been able to tell if they were brown with all of the red that was going on in the dish, but it was very pretty and it was so yummy! I had 3 people ask for the recipe and there were only about 15 people there, so you know it was great. Definitely a keeper for the recipe box! Oh, and we used apricot jelly. Didn't have preserves onhand. The flavor was great (strawberry would've been too much, I think) and it helped give it that salsa texture.

Grilled Stuffed Red Snapper

Soooo good! I made this once for a guy friend and once for my family and both times it was a huge hit! If you do your prep work in advance (chop up all of the veggies and stuff) it is a really easy recipe. It's even good heated up the next day. I baked the fish based on other reviews and 16 or 17 minutes at 350 was perfect.

Asparagus Polonaise

The topping didn't do much for the asparagus except add a flaky texture. I found that the sauted recipes were much better than this one. Sorry!
